What is Cauliflower Soup?
Cauliflower Soup is a culinary warm dish made using cauliflower as a basic ingredient. In addition to this wonderful vegetable, the other vegetables added to the soup have the role of improving its taste and flavor. Among these we can mention carrots, parsley, celery, tomatoes/tomato juice or onions. After all, in a soup, you have the freedom to add whatever vegetables you like. It is your choice to create your own soup recipe, using your favorite vegetables or those you have available in your pantry or refrigerator.
As I did in other articles before, I suggest you use as much as possible fresh vegetables, which you find in the summer season in gardens or markets, organically grown, because they represent an important source of natural ingredients, nutrients and minerals, which our body needs and also helps our kids develop healthy.
Thus, putting together cauliflower, the other vegetables, a little water and salt and pepper to taste, we get a delicious soup in a very short time. For more flavor and a smoother texture, I like to add a mixture of egg yolk and sour cream at the end of the soup cooking process, which I do in almost all soup recipes except cream soups. I recommend you to try this out as I’m sure you’ll love it.
Cauliflower soup – a super healthy soup
Cauliflower is a super vegetable, in my opinion. Why? Well, because it is extremely healthy. Did you know that cauliflower is fat-free and cholesterol-free? And it’s also low in sodium. Basically, in terms of nutrition, cauliflower is a superstar .
In addition, cauliflower is a very versatile vegetable. It does not have a very intense taste, so you can combine it with anything. You can introduce it in soup recipes, or in main dishes, without problems. For example, you can add it to chicken/turkey, and together with a little cheese you will get an extremely simple and delicious casserole recipe.
Or, for an even easier version, you can prepare in a very short time and with few ingredients a cauliflower salad with mayonnaise, which is actually a cauliflower mayo spread, which is similar to the eggplant salad with mayo recipe.
In addition, as already mentioned, adding to cauliflower soup some other vegetables, the intake of vitamins and minerals will increase significantly, along with the aroma and taste.
I added the following vegetables to this cauliflower soup:
1. Onions: first of all, onions will give extra taste. I add onions to all soups, both classic and cream soups, because nothing can replace onions when it comes to flavor and taste.
2. Carrots: besides the pleasant, sweet taste, adored mainly by children, carrots are an important source of vitamins, especially pro-vitamin A beta-carotene, which we convert into vitamin A in our intestines.
3. Homemade tomato juice (or you can add ripe tomatoes): I always add tomato juice to soups and stews recipes, because it has an intense taste, gives a creamy texture and is homemade, prepared from organically grown tomatoes, without added preservatives. Basically, it is a tomato juice obtained only from natural ingredients, by boiling tomatoes, which can be stored without problems for a year, in the cellar or pantry. It can be used in soups, stews, pasta sauces, or any other dish that can be cooked in this delicious sauce.
4. Cauliflower: As we already said, cauliflower is the nutritional superstar vegetable. Being extremely versatile and healthy, cauliflower can be successfully introduced in weight loss diets, in the keto diet, or simply in healthy and tasty culinary recipes, suitable for the whole family.

How to cook Cauliflower Soup?
I wanted to ease my cooking, so I decided to use the CrockPot Express Multicooker for this recipe, but you can definitely cook it into a large pot, on the stove, and you will get the same delicious result.
If you choose to use a multicooker, like I did, you can cook the cauliflower soup using the SOUP Program or the SLOWCOOKING Program, depending on your time and convinience.

Full Recipe – Cauliflower Soup
Cauliflower Soup Recipe – healthy and nourishing soup
Equipment
- 1 CrockPot Express Multicooker/Large pot
Ingredients
- 1 pcs cauliflower
- Soup vegetables onion, carrots, parsnip, celery, red pepper
- 300-400 ml Homemade tomato juice
- 2 L Water
- Salt
- Pepper
- Red paprika
- 1-2 pcs eggs
- Sour cream
Instructions
- First, I will select the program Brown/Sautee for 15 minutes without using the cover;
- Once the program started, I will add a little bit of oil and then add the vegetables chopped;
- Add some salt, pepper and red paprika over the vegetables and mix them from time to time until the 15 minutes are over;
- At the end of this program, I will add the tomato juice and the water.
- Set the Multicooker on the Soup program for 25 minutes. Make sure that the lid cover is blocked and the pression valve is sealed before trying to start de program.
- Once the program is over, release the pressure by using a cooking glove.
- Add the cauliflower broken into small bouquets, mix it with the other ingredients and select the program Manual for 8 minutes. (Close the lid and seal the pressure valve)
- Meanwhile, mix the egg yolk(s) with 3 spoons of sour cream.
- When the Manual program is over, release the pressure, open the lid and add slowly 3-4 ladles of hot liquid over the egg yolk(s) and sour cream mixture and then add this into the pot. Mix well with the hot liquid.
- Put the lid into it’s place and let the soup catch its flavor while it cools.
- If you want to use the Slowcooking program, you can do that by putting all the ingredients from steps 1-7 from the beginning and use the steps 8-10 in the end. I recommend using the Slowcooking program Low temperature for 6H or high temperature for 3H
