Banana Bread – kids friendly dessert

As I already confessed, when I wrote the article about the famous Carrot Cake, Chocolate Banana Bread recipe also entered into my life only after I became a mother.

Chocolate Banana Bread can be considered a kids friendly dessert due to the fact that the sweet taste of bananas allows you to use a very small amount of sugar in its composition, or you can even eliminate sugar completely. I chose to use very little raw sugar because it’s the only type of sugar I’ve used since my daughter Sofia was born.

Also, chocolate banana bread is an extremely simple dessert to prepare, it can be baked in different shapes, using a rectangular large pan, a high Bundt pan, or even in a cake form, depending on your preferences.

I tried to improve the classic recipe by adding a little chocolate, which gives it an extra taste and a finer texture than the classic dessert. Anyway, regardless of whether you choose the version that I present to you today, with chocolate, or stick to the classic, simple version, I assure you that the taste will be delicious and the dessert will be loved by the whole family.

A dessert full of flavor and nutrients

Obviously, the high content of bananas in its composition makes this Chocolate Banana Bread extremely tasty and creamy at the same time. The texture of mashed banana is a smooth one which is preferred by children of all ages.

Equally, bananas are very healthy fruits, and their consumption represents a series of advantages both for the harmonious development of children and for the proper functioning of the adults.

It is important to mention that bananas contain pectin, which helps normalize digestive transit. In addition, bananas are an important source of vitamins, among which I mention vitamin B6 and vitamin C. They also contain other important minerals and vitamins, such as iron, magnesium, calcium, phosphorus, vitamin A, vitamin E, folic acid and carotene.

In addition to the good taste and creamy texture that I already mentioned, bananas offer a large amount of fiber that gives the feeling of satiety, but their consumption by diabetics should be avoided, because they are rich in sugars and have a high glycemic index. For the same reason, it is recommended that when we use bananas for various desserts, as in the case of Chocolate Banana Bread, we limit the amount of sugar, or eliminate it completely.

Eggs, butter and milk in the composition of this delicious and filling dessert are important sources of protein and calcium, which we have discussed and will no doubt discuss in many recipes ideal for children.

If you choose to add chocolate, as I did, I recommend choosing one with a high cocoa concentration (80%) and one that contains cocoa butter, not other types of fat. Unfortunately, more and more chocolate brands choose to use palm oil, or other types of vegetable fats in the chocolate composition, but I strongly believe that a quality chocolate must contain at least 80% cocoa and only cocoa butter.

As I said before, I don’t recommend eating chocolate every day, nor consuming it in large quantities, but I believe that adding some quality chocolate in various desserts significantly improves the final taste. In addition, chocolate has a number of beneficial effects on our body, among which I mention the fact that it helps reduce the risk of cardiovascular diseases and improves cognitive functions.

Equipment

  • 1 Thermomix / Mixer

Ingredients
 
 

  • 3 pcs bananas
  • 125 g butter
  • vanilla extract
  • 75 g milk
  • 3 pcs eggs
  • 100 g brown sugar
  • 300 g flour
  • 2 tsp backing powder
  • 80 g chocolate cut into pieces
  • ½ tsp salt
  • 2 tsp ground cinnamon

Instructions
 

  • Crack the eggs and separate the egg whites and the egg yolks. Insert the butterfly whisk into the mixing bowl. Add the egg whites, the salt and 2 tsp of brown sugar, then mix them well using 4 min – Speed 3.5, to create a soft egg whites foam. During the time, you can add 1-2 tsp of sugar to make sure the foam would be great;
  • Pour the foam into a big bowl and clean the mixing bowl;
  • Put the chocolate in the mixing bowl and grate it 8 sec- Speed 5. Set aside. Clean the mixing bowl. Heat the oven at 170°C.
  • Add into the clean mixing bowl the butter to melt it using 2 min – 80 Degrees Celsius – Speed 2;
  • Add the bananas and mix them with the melted butter for 10 sec – Speed 4;
  • Add the vanilla extract, the milk, the egg yolks, the brown sugar and the cinnamon and mix them all for 20 sec – Speed 4;
  • Add the flour and the baking powder and mix them all again for 30 sec – Speed 4;
  • Into the bowl of egg whites begin to add 2-3 spoons of the mixture from the mixing bowl and mix gently using a spatula until you add the entire composition.
  • Add the chopped chocolate and mix the composition gently using the spatula;
  • Pour the composition into a baking pan covered with backing paper and put it into the oven for 50-60 min, at 170°C.
