The main difference between a Bundt Cake and a regular cake lies in the pan in which they will be baked in the oven. This leads to other differences in terms of the required baking time and the cake’s texture, especially on the exterior.

Thanks to the unique shape of the Bundt pan, it allows for even baking of the cake as the oven’s temperature reaches multiple areas, unlike baking in a regular pan, where the dough’s contact with the pan is only at the bottom and sides. Because of this, the Bundt Cake will be more evenly baked, at least on the exterior, as the Bundt pan enables this.

Moreover, the Bundt pan can hold a large amount of batter, which may require, in certain cases, an extended baking time. While a regular cake may be baked in 40-45 minutes, a generous Bundt Cake may need up to 60 minutes to bake evenly.

In such cases, it is recommended to perform the toothpick test after the first 45 minutes to check if the Bundt Cake is fully baked inside. This test consists in sticking a toothpick into the dough and see if it comes out clean. If it does, that means the cake is baked enough and you can remove it from the oven. If the toothpick comes out with slimy dough, this means you need to bake the cake a little more.

So, taking into consideration these aspects, the Bundt Cake can be thick and moist, without much expansion going on during the baking process. This is why I recommend you to use this particular Bundt Cake recipe, because I am going to show you how to make an airy Bundt cake batter.

How to make the best Bundt Cake?

As I already told you, this recipe for the Bundt Cake is a special one, because I used several tricks to achieve an impressive taste and texture.

The most important aspect is that I start this recipe by separating the egg yolks from the egg whites. By doing this, you will obtain two compositions with completely different textures, which you will gently mix together in the end until they are fully incorporated. From the beaten egg whites combined with a little sugar and a pinch of salt, you will achieve a fluffy foam that you’ll keep in the refrigerator until needed. To obtain this foam, I chose to use the Thermomix, with the butterfly whisk this time. If you own this wonderful appliance and follow this recipe, remember that the mixing bowl must be perfectly clean and dry before adding the egg whites.

If you don’t have a Thermomix, no worries. The easiest way to achieve this egg white foam is by using a handheld mixer. Simply place the egg whites in a spacious bowl, add a pinch of salt, and start mixing at medium speed. After a few seconds, you can increase the mixer speed to the highest setting. Mix until you achieve a fluffy foam. During the mixing process, you can gradually add sugar, not all at once.

Next, we’ll create an egg yolks cream. Essentially, we’ll create a new texture, this time a creamy one, using the egg yolks and most of the remaining ingredients.

Finally, we’ll combine the two textures using a spatula, adding a little of the egg white foam over the egg yolk cream until fully incorporated. In the end, we’ll achieve an airy batter that will remain light even after baking. We’ll gently fold in the fruits using a spatula.

It’s not difficult, but by following these instructions, we’ll achieve an airy Bundt Cake, similar to a sponge cake, but with a unique appearance.

Full Recipe – Fruits and Yogurt Bundt Cake

If you own a Thermomix and you have a Cookidoo subscription, you can definitely use the Cookidoo recipe for Yogurt Cake. I changed this recipe a little bit, by separating the egg yolks from the egg whites. By doing this, I get in the end an aerated dough, similar to the sponge cake. Also, keep in mind that you don’t have to be a Thermomix owner to cook this delicious dessert. Simply use a whisk, a spatula and some bowls and you can have the same incredible yogurt cake with forest fruits in no time.

Equipment

  • 1 Thermomix or mixer/whisk/spatula
  • 1 Bundt pan/silicon mold

Ingredients
  

  • 3 pcs eggs
  • 100 gr brown sugar
  • 200 gr flour
  • 120 gr yogurt
  • 80 gr sunflower oil
  • 1 tps baking powder
  • 1 tps vanilla extract
  • 300 gr fresh forest fruits (raspberries, blueberries, blackberries)
  • 1 pch salt

Instructions
 

  • The first and extremely important step (in my opinion) is to separate the egg yolks from the egg whites. This way, you will get an aerated dough in the end,similar to the sponge cake.
  • Then, place the butterfly whisk into the mixing bowl and beat the egg whites with 1spoon of brown sugar and 1 pinch of salt using 4 MIN – Speed 3.5. You will get a nice fluffy egg whites foam.
    IMPORTANT:THE MIXING BOWL HAS TO BE CLEAN AND DRY WHEN ADDING THE EGG WHITES, IN ORDER TO GET A NICE, FLUFFY FOAM
  • Place the foam into a bowl and leave it into the fridge until needed. Remove the butterfly whisk. Rinse the mixing bowl.
  • Place the egg yolks, the remaining sugar, the yogurt, the oil and the vanilla extract into the mixing bowl and create a nice mixture using 30 SEC – Speed 5
  • Using a sieve, add the flour and the baking powder and mix the composition for 2MIN – Speed 5
  • Now, using the spatula, incorporate the egg whites foam into the composition from the mixing bowl. In the end, add the fruits and mix gently, also by using the spatula
  • Pour the yogurt bundt cake dough into the silicon molds or in a bundt pan
  • Bake the yogurt bundt cake into the preheated oven for 45-50 min at 180o Celsius
    TIP: Use a toothpick to test if the bundt cake is well done on the inside by sticking it into the dough and see if it comes out clean. If it does, that means the cake is baked enough and you can remove it from the oven. If the toothpick comes out with slimy dough, this means you need to bake the cake a little more
  • Allow to cool in pan for 10 minutes before transferring to a serving plate and leaving to cool completely
