Full German Red Cabbage Recipe
German Red Cabbage Recipe
- 1 Thermomix / Food chopped / Mandoline slicer
- 1 Pan
- 1 Spatula
- 2 pcs Red cabbage – medium
- 2 pcs Shallots
- 2 tbsp Chicken grease or vegetable oil
- 2 pcs Red apples grated
- 3 tbsp Brown sugar
- 200 ml Red wine
- 2 pcs Bay leaves
- 1 tsp Cinnamon – grounded
- 1 tsp Cumin – grounded
- 1 tsp Black pepper – grounded
- 1-2 tbsp Balsamic vinegar
- 250-300 ml Hot water vegetable soup
- First, cut the red cabbage into half. Remove the triangular core of the cabbage using a knife. Then, cut the cabbage into smaller pieces. Chop the red cabbage with the Thermomix by placing 400 gr of cabbage pieces into the mixing bowl and then select 5 SEC – Speed 4. Repeat the process until you finish the whole cabbage.You can shred the cabbage using a knife or a mandoline slicer, so if you do so, simply remove the red cabbage triangle core, without cutting it into smaller pieces.
- Also, peal the apples, core them and grate them using the Thermomix by selecting 5 SEC – Speed 4. Again, you can replace the Thermomix with a food chopper.
- Slice the shallots juliennes using a knife;
- Place a large pan on the stove to heat. Once heated, add the chicken grease (or vegetable oil), then add the julienned shallots and add salt to taste. Sautee the shallots;
- The cabbage (red or green) goes perfect with chicken or pork grease, but if you don’t have any, simply use vegetables oil;
- Then, add the sugar and mix well. Start adding the chopped red cabbage.
- Add balsamic vinegar, red wine, bay leaves, cumin, cinnamon and black pepper and mix well all the ingredients. Pour the water and close the lid. Cook the red cabbage for 30 minutes.
- Add the grated apples and cook 10 minutes more. Make sure the red cabbage is soft enough before ending the cooking process. If necessary, cook a few more minutes.
