First of all, I want to confess that now I tried leek for the first time. Honestly, I didn’t know what this green vegetable tastes like, but it definitely makes you think of spring, although it is available almost all year round, in its fresh form.

I knew that it was a fairly common ingredient in French cuisine, even in Eastern Europe it is used in various recipes, but I had never used it and had no idea what it tasted like.

I tasted the leek before cooking it and I can honestly say that it is completely different from what I expected it to be. I say this because it seems like a very hard and rigid vegetable, at first sight. But, once you taste it, you realize that it is much more tender than green onions, for example. And regarding the taste, I would dare to say that it represents a perfect combination between the aroma of green onion and garlic. And I like both green onions and garlic, so for me leeks are, categorically, a delicious ingredient, which I will use again in the future, whenever I have the opportunity.

I saw many recipes that presented a kind of quiche with cheese, leek and ham, or chicken, but I chose to prepare the vegetarian version, only with cheese and leek, because I felt the need for a lighter dinner, with a fresh aroma, which would fit perfectly for this beginning of the year and is completely different from the loaded tables of the last period.

Ingredients
  

For the dough

  • 250 g Flour
  • 125 g Soften butter
  • 65 g Water
  • 1 pc Egg
  • 1 tsp Salt

For the filling

  • 2 pcs Leeks we will use only the white part;
  • 1 tbsp Butter
  • 100 g Salted cheese you can use Cheddar or Mozzarella;
  • 4 pcs Eggs
  • 400 g Heavy cream
  • Salt
  • Black Pepper

Instructions
 

  • First, you are going to make the dough. For this, place the ingredients for the dough into the mixing bowl and KNEAD – 5 minutes. You should do the same thing if you use a bowl and a spatula or a kneading machine.

  • Place the dough into a bowl and cover it with plastic foil.

  • Place it into the fridge for at least 2 hours before baking.
  • Before baking, take out the dough from the fridge and place it on a floured surface. Stretch it using a rolling pin to fit the baking tray that you are going to use for the tart.
  • Place the dough into the baking tray and make sure you also cover the side walls of the tray.
  • Using a fork, bite the dough to release the air that could rise the dough while baking.
  • Bake the dough into the preheated oven for 20 minutes at 200o Celsius (392o F).
  • After that, take out the dough and leave it to completely cool.
  • Now, prepare the filling. Start by cutting the leeks julienne.
  • Place a pan on the stove and melt the butter.
  • Then, pour the julienned leeks, add salt and pepper, as you like.
  • Sautee the leeks until it softens;
  • Grate the cheese. I used the Thermomix for 5 SEC – Speed 7;
  • Mix the cheese, the heavy cream, the eggs, salt and pepper until you get a creamy composition. I used the Thermomix 10 SEC – Speed 5;
  • Now, place the cooked leeks on the tart crust and make sure you cover the entire surface;
  • Then, pour the cheese mixture;
  • Bake the tart into the preheated oven for 40-45 minutes at 180o C (356o F).

  • I know it will be a real challenge, but try to let the tart cool for at least 15-20 minutes before serving it.
