How do you cook a traditional Potatoes Stew

In Romania, potato stew is one of the traditional dishes that everyone knows. Whether you choose to prepare a potato stew with or without meat, the potatoes stew is an ideal combination between a filling and tasty dish with a light texture.

If you choose to cook Potatoes and Turkey Stew, as I did, you will have a light meal, but also full of protein, vitamins and minerals. I chose to use turkey meat, but Potatoes Stew can also be cooked with other types of meat, such as pork, beef or even pieces of sausage.

If you choose to cook Potatoes Stew without meat, you get a delicious, filling meal, full of flavors that fit perfectly together and you can enjoy this incredible taste even in diets for weight loss, for fasting or simply if you are a vegetarian.

Potatoes stew is based on a few basic ingredients, including: onions, tomato sauce, potatoes, other vegetables such as carrots, red bell peppers or even diced tomatoes. If you choose to cook the meat version, you will add the type of meat you prefer to the ingredients already mentioned.

The vegetables used in the preparation of potatoes stew, but also the meat used, must be sautéed in a little oil, even for only 2 minutes, to acquire a delicious taste. Thus, the onions, carrots, red pepper and meat need these 2-3 minutes of additional individual cooking to achieve a delicious traditional potatoes stew dish. Potatoes will only be added towards the end of the cooking process of the final dish.

How to serve Potatoes and Turkey Stew?

If you choose to cook Potatoes and Turkey Stew, or if you replace the turkey meat with any other type of meat from those already mentioned, then you will get a main dish, which is served warm, possibly next to a salad of raw vegetables or pickles.

If you choose to cook the meatless version of Potatoes Stew, then you can either use it as a main course, or you can use it as a side dish alongside a meat or fish based recipe. How to thicken the sauce for Potatoes and Turkey Stew?

In the past, housewives used to thicken the sauce for various dishes similar to Potatoes and Turkey Stew by using a quantity of flour diluted in water or tomato sauce, which they added at the end of the cooking process. Basically, that mixture of flour and liquid was left to boil for another 1-2 minutes before turning off the heat under the pot in which the stew was cooked.

Personally, I avoid using boiled flour to thicken various sauces. I prefer to add a bit of cornstarch at the end of the cooking process, which does exactly the same thing as flour, which is to thicken the liquid part of the stew, giving it a denser texture that makes you think of it as a main course rather than a soup.

Equipment

  • 1 CrockPot Express Multicooker/Large pot

Ingredients
 
 

  • Red potatoes
  • Onion
  • 3 pcs garlic cloves
  • Red pepper
  • Carrots
  • 500 g turkey breast
  • Homemade tomato juice
  • Oil
  • Salt
  • Pepper
  • Red paprika
  • Bay leaf
  • Optional: cornstarch

Instructions
 

  • Cut the turkey breast into pieces and place it into a bowl, adding olive oil, salt and pepper and set it aside while you prepare your vegetables;
  • Chop the onion, the garlic and the red pepper;
  • Slice the carrots (or cut them however you like);
  • Start the multi-cooker, remove the lid and Select the BROWN/SOUTE program for 10 min;
  • Once the program is ready, add some oil. Then add the turkey breast. After several minutes, add the chopped vegetables (onion, garlic, red pepper). Add salt, pepper and paprika;
  • When the program ends, add homemade tomato juice and the bay leaf and cook them using POULTRY – 25 min (I like to use more time for cooking the turkey than the chicken);
  • When the program ends, add the potatoes, peeled and diced. Also, add the slices of carrots. Add some water, so that all the ingredients in the pot can boil in the water. Cook them using STEW – 10-15 minutes.
  • Optional: if you think that the result is too liquid, add a spoon of cornstarch mixed with homemade tomato juice and pour it over the stew. Mix it well in the pot to make sure you have a homogeneous composition.
  • !!! Important!!! You can make this dish using the Slow-cooker function of the Crockpot. If to choose to do so, follow the steps 1-5. After that, you can add all the remaining ingredients and boil the stew using the Slow-cooker function.
