Ingredients
 
 

FOR SHORTCRUST:

  • 200 g unsalted butter chilled and cut into pieces, plus extra for greasing
  • 400 g plain flour plus extra for dusting
  • 4 pcs egg yolks
  • 1 tsp baking powder
  • 1 tsp natural vanilla extract
  • 20 g brown sugar

FOR THE QUINCE PIE FILLING:

  • 4 pcs quinces rinsed and peeled;
  • 100 g butter cut into pieces;
  • 3 tbsp brown sugar / honey;
  • Grounded cinnamon;

FOR THE MERINGUE:

  • 4 tbsp icing sugar
  • 4 pcs egg whites
  • ½ tbsp cornstarch

Instructions
 

  • Place all the ingredients for the shortcrust into mixing bowl and mix 30 SEC / SPEED 5; If you don’t have a Thermomix, use a kneading machine or a mixer
  • Using your hands, form a ball of pastry and wrap it in plastic foil, then place into the refrigerator for 15-30 minutes to rest;
  • Meanwhile, start cooking the quince pie filling. For this, peel and cut the quinces in pieces, then grate them 7 SEC – SPEED 5; If you don’t have a Thermomix, simply use a vegetable grater
  • Place a pan on the stove and heat it. Once heated, add the butter and the grated quinces; Add the sugar/ honey for the filling and the cinnamon;
  • Mix well and cover the pan with a lid. Let the quince filling cook for 20-30 MINUTED by stirring occasionally;
  • Once cooked, leave the quince pie filling to cool; Preheat the oven at 180 °C;
  • Take out the shortcrust from the refrigerator and place it on a floured surface; Using a rolling pin, stretch the pastry and place it into a baking tray greased with butter/oil;
  • Prick the dough with a fork and place it into the preheated oven for 20 MIN;
  • Meanwhile, prepare the meringue. For this, place the butterfly whisk into the mixing bowl; Add the egg whites and the cornstarch and beat them 4 MIN – SPEED 3.5; During this time, add the icing sugar through the lid; If you don’t own a Thermomix, simply use a hand mixer
  • Place the quince pie filling on top of the shortcrust, then add the meringue layer, making sure you cover the entire surface of the pie;
  • Bake it into the preheated oven for 10-15 MIN at 200 °C, until meringue is slightly brown;

  • Let it cool for 30 minutes, then serve this amazing quince pie.
