The zucchini mayo salad recipe if very similar to the cauliflower mayo salad recipe. Basically, it involves the same steps, just that you use the zucchini for this recipe, instead of cauliflower, but the preparation process is quite the same.

I used the Thermomix to ease my cooking for this recipe, but it you don’t own one, you can simply use a blender or a chopper to grate the vegetables and to mix the zucchini mayo salad spread in the end.

Ingredients
  

  • 2 pcs Zucchinis
  • 2-3 pcs Garlic cloves
  • Mayonnaise
  • 1 L Water
  • Salt
  • Pepper

Instructions
 

  • Peal the zucchinis and cut them into pieces
  • Using the Thermomix or a chopper, grate the zucchinis. If you use the Thermomix, select 5 SEC – Speed 5
  • Transfer the grated zucchini into a pot, fill it with water and place it on the stove to boil for 10 MINUTES; Add 1 tsp salt into the pot
  • Once the zucchini is boiled, pour the composition from the pot into a sieve to eliminate the excess of water; Leave it to cool
  • Once the zucchini has completely cooled, place it on a fabric kitchen towel and squeeze the towel with your hands to remove the excess water
  • Place the zucchini into a bowl
  • Add the crushed garlic and 2-3 tbsp mayo

  • Use a spatula to thoroughly mix the ingredients in the bowl
  • Season with salt and pepper to taste
  • The salad is ready. The amount of garlic, mayo, salt,and pepper can be adjusted according to your preferences
