Cherry Clafoutis Recipe

Larisa Iernutan
Cherry Clafoutis is a traditional French desserthailing from the Limousin region. It is a rustic and delectable treat made withfresh, sweet cherries baked in a smooth custard-like batter. The word"clafoutis" itself means "to fill up" in Occitan, whichaptly describes how the cherries are generously dispersed throughout the dish.Traditionally, Cherry Clafoutis is made with whole cherries, including theirpits, as they impart a subtle almond-like flavor to the dessert. However, Irecommend you to pit the cherries for easier consumption.

Equipment

  • 1 Thermomix / Mixer / Whisk

Ingredients

  • 20 g Butter
  • 70 g Honey the Cookidoo recipe uses sugar, but I preferhoney
  • 20 g Coconut sugar
  • 500 g Pitted cherries
  • 100 g Plain flour
  • 4 pcs Eggs
  • 1 pinch Salt
  • 300 g Milk

Instructions

  • Preheat the oven at 180o Celsius. Grease a baking tray with butter and line in the coconut sugar
  • Spread the cherries on the bottom of the baking tray. If they left juice after you removed the stones, pour it over the fruits.
  • Place the honey, flour, eggs, salt and milk in the mixing bowl and mix for 10 Sec/Speed 5
  • Pour the mixture over the cherries and then bake for 40 minutes at 180°C. After removing the clafoutis from the oven leave it to cool. Serve warm or cold.

Notes

Tip: You can sparkle some powdered sugar (brown sugar or coconut sugar) on top of the Cherry Clafoutis, or you can add ice-cream topping if you don’t want to serve it simple, as it is.
