First, you need to rinse the pork loin with cold water. If necessary, remove the excessive water by using a paper towel
Then, using a knife, score the pork loin
Scrub the pork loin with salt, pepper and a little olive oil
Then, using a garlic press, crush the garlic cloves
Place the crushed garlic and the other ingredients for the marinade (olive oil, ketchup, mustard, salt, black pepper, honey) into a bowl.
Mix them well
Now, brush the pork loin with the marinade on each side
Place the pork loin covered with marinade into a plastic bag and pour the remaining marinade into the bag
Seal the bag (I recommend you to seal the bag using a vacuum sealer, but if you don’t have one, try to close the bag after you take out as much air as possible)
Place the bag into the refrigerator for at least 4 hours before cooking
After that time, place the marinated pork loin into the slow cooker
Cook the marinated pork loin for 8 hours using the LOW temperature of the slow cooker (or 4-5 Hours using the HIGH temperature of the slow cooker)
After that, preheat the oven at 200O C (392O F)
Gently place the slow cooked pork loin on a plate and slice it
Transfer the slices of slow cooked pork loin in a roasting tray covered with vegetable oil
Pour a generous amount of the liquid from the slow cooker over the pork loin slices
Roast the pork loin into the preheated oven for approx. 20 minutes (make sure to flip the slices on each side)
In the end, leave the pork loin to cool for 10 minutes before serving
I recommend to serve the pork loin with rice or potatoes
