Why did I choose Risotto with Parmesan Cheese?

For me, the word “risotto” has always meant a sophisticated culinary dish, which reminds you of the delicious Italian cuisine. But risotto can be simple, if you choose to use simple ingredients. In this case, I chose to cook a simple recipe for Risotto with Parmesan Cheese.

Why did I choose this? Well, it seems to me that risotto is an ideal option for dinner, but it also goes very well for lunch. In addition, you can use this risotto with parmesan cheese as a side dish, next to a meat or fish dish. So, in the end, it is everyone choice if they want to serve this risotto with parmesan cheese as a main dish, or as a side dish, depending on their preferences or time.

I choose, most of the time, to cook it as a side dish. If, however, time does not allow me to prepare a meat or fish-based dish in addition to the portion of risotto with parmesan cheese, then I add a little salmon or chicken/turkey to the risotto recipe, so that I can give my daughter a complete dish, which includes both meat and rice, vegetables and obviously, cheese.

We are big fans of dairy products, we eat cheese at almost every meal. Whether we’re talking about hard, salty or sweet cheese, cheese is an indispensable food in our family’s fridge.

Thus, I chose to cook this recipe for risotto with parmesan cheese because it seems to me that it is a simple dish, but at the same time, complete from a nutritional point of view.

How to get a creamy Risotto with Parmesan Cheese?

I don’t know if there is a secret to getting a creamy Risotto with parmesan cheese, but there are certainly several factors that can help you achieve a wonderful result, both in taste and texture.

The first aspect concerns the type of rice you use. Nowadays, you can find a wide variety of rice in stores. Among these, we can mention arborio rice, basmati rice, black rice, brown rice, parboiled rice, and many others.

I generally use long grain rice as I am used to cooking this type of rice extremely simply, especially using the Thermomix. But, as I said before, you can choose a special rice for rissotto, or any other type of rice respecting the cooking time required for each variety. In general, the type of rice recommended to achieve a creamy risotto is arborio rice .

Another extremely important aspect for obtaining a creamy rissotto is to use the right amount of liquid. Whether we are talking about water, tomato juice, vegetable/chicken soup or even a small amount of wine, it is extremely important to use the amount of liquid proportional to the amount of rice. Thus, the right ratio of rice to liquid for a creamy risotto is 1:3. That means that to one cup of rice, you need to add 3 cups of liquid.

But remember, when we say liquid, we mean any source of liquid in the composition of that rissotto. Thus, water, tomato juice, chicken/vegetable soup, the addition of wine, or even the addition of vegetables, which during the cooking process also removes water, all these must be taken into account when determining the amount of liquid required for the preparation of the rissotto.

Nutritional values for risotto with parmesan cheese

As I said before, I think that this recipe for risotto with parmesan cheese gives us almost everything we need, for the proper functioning of our body and for the harmonious development of our children. Precisely in order to obtain a dish full of nutrients beneficial for the growth of children, I chose to slightly modify the original recipe, taken from Cookidoo .

Thus, adding vegetables, which supplement the intake of minerals and vitamins, and giving up the wine, but replacing it with tomato juice, I obtained a wonderful kidsfriendly recipe of risotto with parmesan cheese.

Ingredients
 
 

  • 40 g Parmesan cheese cut in pieces (2 cm)
  • 30 g Shallot approx. 1 pcs
  • 10 g Extra virgin olive oil
  • 40 g Unsalted butter diced
  • 320 g Risotto rice
  • 150 g Homemade tomato juice
  • 820 ml Water
  • 1 pcs Carrot chopped in pieces
  • 1 pcs Red pepper bell chopped in pieces
  • ½ – 1 tsp Fine sea salt to taste
  • Black pepper to taste

Instructions
 

  • Place Parmesan in mixing bowl and grate 10 sec/speed 10. Transfer to a bowl and set aside.
  • Place shallot in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  • Place vegetables in mixing bowl and chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  • Add oil and 20 g butter then sauté 3 min/120°C/speed 1.
  • Add rice and, without measuring cup, sauté 3 min/120°C/COUNTERCLOCKWISE/speed 1.
  • Add tomato juice and, without measuring cup, cook 1 min/100°C/COUNTERCLOCKWISE/speed 1.
  • Add water, salt and black pepper then scrape base of mixing bowl with spatula to loosen rice. Place simmering basket instead of measuring cup on mixing bowl lid and cook 15-18 min/100°C/COUNTERCLOCKWISE/speed 1 until al dente. Leave risotto to rest in mixing bowl for 1 minute then stir in remaining 20 g butter and reserved grated Parmesan.
