Meatballs soup: Healthy and filling dish
Personally, I consider soups to be the ideal dish. Why? It’s simple! It represents the perfect combination of protein (from meat or dairy products), vitamins and minerals (from the vegetables used) and, in addition, it is always served warm, so this makes soups a wonderful dish.
Vegetable soup, for example, is known for its therapeutic effects and is always recommended by doctors, in case of illness or during the recovery period. The vegetables we can use for soups are very diverse, whether we are talking about green, seasonal vegetables, such as onions (even green onions), garlic, carrots, parsley, parsnip or celery, or whether we choose to use vegetables that we don’t find in our local gardens, like broccoli, Brussels sprouts, butternut squash, bok choy or others, because the list is too long to be written down.
Practically, with such a wide range of vegetables, we can cover the preferences of picky eater children or… adults.

When we talk about the meat that can be used to make meatballs for this soup, we can also choose from several options such as chicken, pork, beef, turkey or even a combination of two of these.
For this meatballs soup recipe, I chose turkey meat, more precisely turkey breast, because I had fresh turkey meat raised in the yard, by a family of farmers who regularly provide us with meat from the animals raised by them.
Thus, combining the vegetables, extremely healthy, with the meatballs, which are very filling, we only need a little tomato sauce, for extra taste and flavor, and a little water, to ensure the necessary amount of liquid to obtain a perfect meatballs soup soup, and the result is FABULOUS!
When do we eat the soup?

Depending on how much you like it, you have the freedom to eat soup anytime, in any season, at any mealtime, any day. Certainly, on cold winter days, a hot bowl of soup warms you up and gives you the energy you need, but even in the summer, soup can be considered a lighter option than a very substantial main course. In addition, in the summer you can use fresh seasonal vegetables, which have a more intense taste than frozen ones.
I am absolutely convinced that there are soup lovers who delight their taste buds with a portion of warm soup at any time of the day, whether we are talking about breakfast, lunch or dinner.
In our family, for example, soup is usually served at lunch. Precisely because it is quite a consistent and filling soup, we prefer to eat only the soup for lunch, and serve the main course after 3-4 hours.
Anyway, personally, it seems to me that for a 2-5 years old child it is enough to eat one dish at a meal, so I prefer to serve the soup separately from the main course. And honestly, even for us, adults, it’s better this way. Basically, by doing so, we don’t feel full after a meal, but we get full and enjoy the taste of food better this way.
Full Recipe – Meatballs soup
Meatballs soup: How can such a simple soup be fabulous?
Equipment
- 1 CrockPot Express Multicooker/Large pot
Ingredients
For the soup:
- Β½ pcs Onion
- Carrots
- Red Pepper
- Parsley Root
- Celery
- Borsh or lemon juice
- Tomato juice
- 30 g White rice
- Oil
- Salt
- Pepper
- Water
- Sour Cream
- 1 pcs Egg
For the meatballs:
- 300 g Meat minced (I used pork)
- 30 g White rice
- Β½ pcs Onion
- 1 pcs Egg
- Salt
- Pepper
Instructions
- First, add some 1 tsp of oil into a pan and fry 1 half of chopped onion and 30 gr of rice, until translucent. After itβs done, let it cool.
- Mix the fried onion and rice with the minced meat. Add salt, pepper, 1 egg and mix well. Using oil on your hands, shape small balls of the mixture to create the meatballs. Set them aside, because you will use them in a short time.
- Chop the vegetables
- Start the BROWN/ SAUTEE program on the Crockpot Express and select 10 minutes. Keep in mind to use this particular program without the lid.
- Once the pot is heated, add 1 spoon of oil and the chopped vegetables. Add salt and pepper and mix them all from time to time.
- When the program cooking time is over, add the remaining 30 gr of rice, tomato juice, water, borsh (or lemon juice) and mix them well. IMPORTANT: if you choose to use borsh, it should be ok if you add 250 gr of borsh for 2.5l of soup. If you choose to use lemon juice, 1 spoon of it should be enough for the same quantity of soup. But these quantities depend of each personsβ taste.
- Slowly, add the meatballs into the pot.
- Once you added these ingredients, cook the soup using the SOUP program for 45 minutes, because the meatballs need a little more time than the vegetables to cook.
- By the end of the program, add a mixture of egg yolk and sour cream, to give the soup a special flavor.
