Thus, to obtain rich and delicious apple cheesecake, it is absolutely necessary to bake it using water bath.

What does this mean? Baking cheesecake using water bath involves placing a generous container with water on the bottom of the oven during the baking process. After a period of time in which the cheesecake was baked using a water bath, this container with water will be removed from the oven, and the cheesecake will be baked some extra minutes. Basically, the water bath allows the cream cheese layer to be cooked in such a way that it becomes fluffy and airy on the inside.

  • 1 Vegetable Grater
  • 1 springform
  • 1 Spatula
  • 1 Bowl
  • 1 Pot / Tray with water for water bath

Ingredients
 
 

For the biscuits base:

  • 120 gr unsalted butter cubed
  • 250 gr biscuits broken into pieces

For the cream cheese filling:

  • 250 gr mascarpone cream cheese
  • 300 gr Philadelphia cream cheese or similar
  • 200 gr whipping cream
  • 50 gr brown sugar/ honey
  • 4 pcs eggs
  • 1 tsp vanilla extract

For the apple crumble:

  • 400-500 gr apples
  • 20 gr lemon juice
  • 100 gr unsalted butter plus extra for greasing
  • 100 gr almonds
  • 100 gr plain flour
  • 1 tsp cinnamon
  • Optional: 50 gr brown sugar/ honey

Instructions
 

  • Preheat the oven at 180℃ (356℉)
  • Now, we shall prepare the biscuits base layer. For this, place the butter (for this layer) in the mixing bowl and melt it 2 MIN – 100℃ (212℉)– Speed 1
  • Add the broken biscuits and mix well 10 SEC – Speed 7
  • Spread the biscuits base on the bottom of the springform. Use a spoon to press the biscuits base in order to achieve a compact layer
  • Place the tray into the refrigerator for 30 MINUTES
  • Rinse the mixing bowl
  • Now, it’s time to prepare the apple crumble. For this, peel and cut the apple into pieces and place them into the mixing bowl. Add freshly squeezed lemon juice over them
  • Grate them 4 SEC – SPEED 4
  • Transfer the grated apples into a sieve and let them drain
  • Place the almonds in mixing bowl and grind 10 SEC – SPEED 10
  • Add the flour and butter (and sugar/honey, if you decide to use) and pulse TURBO/1 SEC/3 times. Scrape down sides of mixing bowl with spatula
  • Add the grated apples and the cinnamon and mix well 1 MIN – SPEED 3
  • Transfer the apple crumble into a different bowl and set aside. Rinse the mixing bowl
  • Now, let’s make the cream cheese layer. For this, place the cream cheese, the whipping cream and the sugar into the mixing bowl and mix them 30 SEC- SPEED 4
  • Add the eggs and mix them again for 1 MIN – Speed 4
  • Since you are going to bake the apple crumble cheesecake using water bath, place a pot/tray filled with water on the bottom of the preheated oven
  • Now, take out the springform with the biscuits layer from the refrigerator and place Β½ of the apple crumble over. Level the apple crumble with a spatula
  • On top of the apple crumble, pour the cream cheese layer
  • Place the springform into the oven and bake it with water bath for 40 minutes
  • After this time, remove the pot/ tray filled with water
  • Now, place the rest of the apple crumble over the water bath baked cheesecake and bake the apple crumble cheesecake for extra 20 MINUTES
  • Remove the baked apple crumble cheesecake from the oven and leave it to cool
  • I highly recommend you to leave the apple crumble cheesecake to rest in the refrigerator for at least 4 hours before serving it
