Equipment
- 1 Thermomix / vegetable grater
- 1 Bowl
- 1 Pot
- 1 Spatula
- 1 Whisk
Ingredients
FOR THE DOUGH:
- 500 g flour
- 250 g butter
- 1 pinch salt
- 1 tbsp brown sugar
- 10 g baking powder
- 150 g warm water
FOR THE VANILLA CUSTARD:
- Β½ – 1 pc vanilla pod, to taste
- 500 g milk
- 1 pc egg
- 1 tbsp sugar
- 1 pinch fine sea salt
- 1 tbsp cornstarch
FOR THE APPLE LAYER:
- 1 kg apples
- 1 pc lemon
- Optional: ground cinnamon
Instructions
- First of all, letβs make the tart dough, because it needs to rest in the refrigerator after crafting it;
- So, place the butter cut into cubes in the mixing bowl of the Thermomix and melt it 2 MIN β 40β (104β) β SPEED 1
- If you donβt own a Thermomix, simply melt the butter into a preheated pot or in the microwave.
- Leave the butter to cool for 1-2 minutes. In this time, using a bowl, mix the flour with the baking powder;
- Now, add all the ingredients for the dough into the mixing bowl (or in a bowl/pot) over the melted butter and knead it with your hand or using DOUGH β 5 MIN
- Wrap the dough in plastic foil and place it into the refrigerator for 10-15 minutes;
- During this time, letβs make the vanilla custard and the apples layer
- For the vanilla custard I used the Vanilla Custard original Cookidoo recipe. If you donβt have a Cookidoo account and neither a Thermomix, I will write you the steps below.– Split vanilla pod lengthways and scrape out seeds. Place seeds and vanilla pod in a pot.– Add milk, the egg, sugar, salt and cornstarch then cook them at medium heat for 10 minutes while continuously mixing with a whisk– Transfer to a serving bowl and use it for your favorite vanilla custard tart pie
- Preheat the oven at 180β (356β)
- Now, itβs time to peel the apples and remove their cores. I grated them using the Thermomix 5 SEC β SPEED 5. You can use a vegetable grater to achieve the same result
- Squeeze the lemon and pour the lemon juice over the apples. Add the sugar and the cinnamon and incorporate them into the grated apples, using a spatula;
- Cook the apples into a pan/ pot for 5-10 minutes
- Place them into a sieve to remove their juice
- Now, itβs time to assembly the apple tart with vanilla custard
- Divide the tart dough in 3 similar pieces
- Place each dough between two baking paper sheets and use a rolling pin to stretch the dough. This way, the dough which is very tender will not break and you handle it easily
- Place the first dough layer on the bottom of the baking tray covered with baking paper (or greased with butter) and prick it with a fork
- Place the apples in order to achieve a uniform layer
- Now, stretch the second dough just like you did with the first one and place it over the apples; Prick it with a fork;
- Place the vanilla custard over the second dough
- Now, stretch the last dough just like you did with the others and place it over the vanilla custard. Prick it with a fork
- Place the apple tart with vanilla custard into the preheated oven and bake it for 40 minutes at 180β (356β)
- Once the vanilla custard tart pie is baked, remove it from the oven and leave it to cool for 30 minutes before serving it
