Equipment

  • 1 Thermomix / Pot
  • 1 Whisk
  • 1 Spatula
  • 1 or 2 Baking tray

Ingredients
  

  • 200 g Grounded walnuts
  • 150 g Brown sugar
  • 6 pcs Egg whites
  • 30 g Flour
  • ½ tsp Vanilla extract
  • ½ tsp Almond extract

Instructions
 

  • First, separate the egg whites from the egg yolks, because this time we are going to need only the egg whites for these chewy cookies;
  • Then, add into the mixing bowl the brown sugar and the egg whites and cook gently for 3 MIN – 100℃ (212℉) – Speed 2.5 to get a nice cream;
  • Add the grounded walnuts and cook 2 min – 100℃ (212℉) – Speed 1.5;
  • Leave the composition to cool;
  • Once cooled, add the flour, the vanilla extract and the almond extract; Mix well with a spatula;
  • Using a baking tray covered with baking paper, place piles of compositions with a tablespoon; Take into account that they will double their width during the baking process, so leave space between them;
  • Bake the cookies into the preheated oven for 15-20 minutes at 170℃ (338℉).
  • After that, leave them to cool until the next day and serve them or store them into jars or metal boxes for up to 1 month.

TIP: Just like gingerbread, these cookies are much tastier and have a finer texture if they are served after a few days after baking.
