First of all, I want to apologize for posting this ideal recipe for the Christmas desserts only now, but being at home with Sofia all day during the holiday period, it was very difficult for me to post.

So, with a little delay, I present to you this wonderful recipe for No-Bake Chocolate Biscuit Log (or Chocolate Biscuit Salami), ideal for a festive meal or for any other occasion, being an extremely easy to make dessert, but delicious and fine at the same time.

So, let’s discover together how we can spend quality time with our children, while we prepare a wonderful dessert that will undoubtedly please everyone who will try it.

What is Chocolate Biscuit Log?

Chocolate Biscuit Log represents, as I already mentioned, an extremely delicious dessert, very simple to prepare, which does not require baking. Basically, by mixing the melted chocolate with the rest of the chopped ingredients, you get a fine composition that is later poured into plastic film, to obtain a kind of roll. The final preparation will be “prepared” by cooling, in the refrigerator, thus obtaining a fine and delicious dessert, which you can then cut into slices, for an easier serving, both for adults and for children.

There are many similar Chocolate Biscuit Roll recipes that are made using milk powder and cocoa powder or carob powder. I chose to make this recipe with chocolate because this gave me the opportunity to use good quality chocolate (minimum 80% cocoa) which I consider to be healthier than regular chocolate bars.

Is Chocolate Biscuit Log kids friendly?

As with any dessert, my recommendation is to serve it in moderation. However, if we analyze the ingredients that are necessary for the composition used to obtain the Chocolate Biscuit Roll, we notice that all the ingredients are carefully chosen, so as to obtain a final kids friendly sweet treat.

Therefore, as I have recommended you on other occasions, I encourage you to use the best quality chocolate, which has at least 80% cocoa content. My recommendation is based on the fact that this type of chocolate has a reduced amount of sugar, compared to milk chocolate, for example.

Dark chocolate with a high cocoa content is more than just a delightful indulgence. It’s a treasure trove of health benefits, making it a guilt-free treat when enjoyed in moderation. Dark chocolate is loaded with antioxidants, such as flavonoids and polyphenols, which are more prevalent in higher cocoa content chocolates. These antioxidants combat oxidative stress in the body, reducing the risk of chronic diseases and slowing down the aging process.

The antioxidants in dark chocolate can help improve blood flow, lower blood pressure, and reduce the risk of heart disease by maintaining the health of the cardiovascular system. Consuming dark chocolate may have positive effects on brain function, too. The flavonoids in chocolate are thought to improve blood flow to the brain, enhancing cognitive functions and possibly reducing the risk of neurodegenerative diseases.

Another extremely important aspect is represented by the fact that, as in all the dessert recipes presented here on the blog, I used raw sugar instead of processed white sugar.

Raw sugar, often labeled as turbinado or demerara, is less processed than white sugar. It’s made by extracting juice from sugarcane, which is then boiled, cooled, and spun in a centrifuge to produce sugar crystals. These crystals are larger and retain a light brown color due to the presence of molasses.

White sugar, on the other hand, undergoes further processing and refinement. After the initial steps similar to raw sugar, white sugar is further purified and bleached, resulting in fine, white crystals. This additional processing removes molasses and other impurities, giving white sugar its neutral flavor and color.

Regardless of your choice, mindful consumption of sugar is key to maintaining a healthy lifestyle.

For those of you who want to prepare this Chocolate Biscuit Log without sugar, I recommend using honey. The result will be extraordinary as well.

The biscuits I used for this dessert are simple, without cream. Basically, they are the simplest sweet biscuits that you can find in any store.

I chose to add cranberries and raisins to the composition of the biscuit roll, and this sweetens the dessert even more, which is why the amount of sugar used was significantly reduced.

Finally, milk is the liquid ingredient that will give this fine texture to the final preparation, easing the process of mixing all the other ingredients together, until the cranberries, biscuits and raisins are completely incorporated into the fine and sweet chocolate cream.

For a special flavor, I chose to add a teaspoon of vanilla extract, but if you prefer other flavors, you can easily replace this extra ingredient with what you like more.

Therefore, I believe that using the ingredients described above, we will get a kids friendly Chocolate Biscuit Log, which will delight both the little ones and the adults gathered around the table.

Equipment

  • 1 Thermomix – OR – Bowl and spatula
  • 1 Saucepan
  • 1 Plastic foil

Ingredients
 
 

  • 500 g Simple biscuits
  • 200 g Milk
  • 200 g Butter
  • 150 g Dark chocolate
  • 1 tsp Vanilla extract
  • 50 g Brown sugar
  • 100 g Raisins
  • 100 g Dried cranberries
  • 2 tbsp Optional: Carob powder

Instructions
 

  • First, break the biscuits with your hands and leave them aside. This is a step that can be easily accomplished by the little ones;
  • Then, place the dark chocolate pieces into the mixing bowl of the Thermomix and chop it finely using 10 SEC – SPEED 8. If you don’t use a Thermomix or a food chopper, simply grate the chocolate using a vegetable grater. Or, you can even chop it finely using a knife.
  • Now, add the milk, the sugar and the butter over the chocolate and COOK 5 MIN – 100oC (212o F) – SPEED 3, to get a fine chocolate cream. If you don’t use the Thermomix, simply place the milk, the sugar, the butter and the chocolate into a saucepan and boil them for 5 minutes, stirring from time to time.
  • Now, it’s time to add the rest of the ingredients (raisins, cranberries, vanilla extract, carob powder) and incorporate them gently into the cream for 1 MIN – SPEED 1,5 COUNTERCLOCKWISE or by using a spatula;
  • Now, let’s return to the pieces of biscuits and pour the composition made earlier over them;

  • Gently incorporate the biscuits into the chocolate cream with a spatula;
  • Now, pour the composition into a plastic foil and wrap it;

TIP: I prefer to use a roll-shaped ceramic dish because it helps me pour the composition into the plastic foil easier.

  • Seal the edges of the foil and make sure you release all the air inside the log;
  • Place the Chocolate Biscuit Log into the fridge overnight;
  • The next day, enjoy this amazing fine and delicious Chocolate Roll.
