Chocolate carrot cake – a dessert based on healthy ingredients

Chocolate carrot cake is a dessert that I only discovered after my little girl, Sofia, was born. I can say the same about Banana Bread 😊 And I’m sure many parents empathize with me from this point of view 😊

I tried to prepare this carrot cake for a celebration organized at Sofia’s kindergarten, and knowing that some children are picky when it comes to food, I thought about what I could add to the classic carrot cake recipe to make it attractive for all children. And then I remembered the ingredient that most children love: chocolate!

Obviously, I chose a quality chocolate that has a low sugar content. That’s how I arrived at this delicious recipe: Chocolate carrot cake.

As you probably already know, the particularity of a chocolate carrot cake is represented by the use of carrots for the composition. Why carrots? Because carrots are vegetables with a sweet taste, that children enjoy, which makes it possible to use a very small amount of sugar to obtain a delicious result, or even completely eliminate sugar from the list of ingredients.

Nutritious dessert

So, if we analyze the list of ingredients that form the basis of this wonderful dessert, we can easily conclude that this carrot cake is full of extremely important nutrients for the development of our children and, in addition, its taste is sensational.

Let’s take them one by one… The first ingredient, and probably the most important, is represented by carrots, obviously 😊

As we all probably heard as children when we were encouraged to eat carrots, and we probably use the same argument to encourage our children to eat carrots, they actually improve eyesight. How is that possible? Well, the answer is very simple: carrots are rich in beta-carotene and Vitamin A, both of which have an essential role in supporting eye tissues.

In addition, many of us do not know that carrots play an important role in detoxifying the body, discouraging tissue aging and even have healing and antiseptic properties. So, unless one is allergic to carrots, eating carrots is more than recommended.

In addition to carrots, in the composition of the batter for this type of chocolate carrot cake we also find eggs, flour, a little cinnamon and the rest of the ingredients that are generally used to obtain a fluffy sponge cake.

The surprise ingredient, which is chocolate, has the role of giving this dessert a pleasant taste for children and a smoother texture. Chocolate, although it is sweet and I do not encourage its consumption often and in large quantities, because I believe that children’s nutrition should contain as little sugar as possible 😊, in turn has real benefits for the body. Of these, it is important to mention that chocolate is an important source of magnesium, and its compounds contribute significantly to a positive, calm state of mind.

Chocolate carrot cake – an extremely easy dessert to prepare

In addition to all the arguments already listed in favor of preparing a chocolate carrot cake, certainly an important aspect is the extremely easy way to prepare it. Basically, all the ingredients are mixed together to obtain an aerated batter. You don’t need any special utensils to prepare this dessert, other than a bowl, a spatula or a whisk and a baking tray.

Chocolate carrot cake can be baked in pans of different shapes, from a cake pan, to a rectangular or square pan, larger or smaller, it depends on how thick you want the cake to be.

Personally, I prefer to choose a rectangular pan, to get this dessert in the form of a cake that I can later cut into square pieces, easy to hold in the little hands of children.

I used the Thermomix to prepare this wonderful dessert, but as you already know, you don’t need to own a Thermomix or any of the other gadgets you see in my recipes to get the same wonderful result.

I used the Carrot Walnut Bundt Cake recipe from Cookidoo, but I replaced the walnuts with chocolate. Also, I used less sugar (brown sugar), because I wanted to make it kids friendly. You can have my recipe below:

Equipment

  • 1 Thermomix or mixer/whisk/spatula

Ingredients
 
 

  • non-stick cooking spray
  • 10 Β½ oz carrots in pieces (1 in.)
  • 4 Β½ oz chocolate cut in pieces
  • 8 oz sunflower oil
  • 14 oz granulated sugar
  • 4 large eggs
  • 10 oz all-purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 pinch salt
  • 2 tbsp ground cinnamon

Instructions
 

  • Preheat to oven 175Β°C. Grease a bundt pan (approx. 10 in.) with non-stick spray and set aside.
  • Place carrots into mixing bowl and grate 8 sec/speed 6. Transfer to a bowl and set aside.
  • Place chocolate into mixing bowl and chop 5 sec/speed 7. Transfer to bowl with grated carrots and set aside.
  • Place sunflower oil and sugar into mixing bowl and mix 15 sec/speed 6.
  • Without measuring cup, mix 22 sec/speed 5 while slowly adding eggs one at time through hole in mixing bowl lid.
  • Add flour, reserved carrots and walnuts, baking powder, baking soda, salt and cinnamon, insert measuring cup and mix 35 sec/speed 5.
  • Transfer batter to prepared bundt pan and bake 40-55 minutes (175Β°C) or until a toothpick inserted into center of cake comes out clean. Allow to cool in pan for 10 minutes before inverting onto a plate.
