Because I like the taste of mayonnaise. As I said before, although it is not recommended to consume mayo very often, or in large quantities, I think that you can occasionally enjoy its creamy texture and intense flavor in various dishes, especially vegetable-based ones. , as is the case with eggplant salad with mayonnaise.

So, for this salad you will need onions, eggplants and mayonnaise, which you will later season with salt and black pepper to taste.

Eggplants baked at home or buy them already prepared?

Personally, I recommend baking eggplants at home, on the grill or on the stove. They can also be baked in the oven or in the Thermomix, in the Varoma dish. I mostly enjoy to prepare them on the grill, thus obtaining a unique flavor from the smoke released during cooking.

  • 1 pcs large eggplant or 2 smaller ones you can also use frozen eggplants – 500gr
  • 1 pcs white onion
  • 100 g homemade mayonnaise
  • Salt

Instructions
 

  • Heat the grill and bake the eggplants (using Thermomix you can bake the eggplants in the Varoma);
  • When the eggplants are ready, peel them and chop them. Then let them drain in a sieve, to remove excess water from them;
  • While the eggplants are draining and cooling completely in the sieve, we will clean the onion and cut it in half. (If frozen eggplants are used, ignore step 1 and step 2);
  • We will add the two halves of onion in the mixing bowl of TM6, we will chop them for 5 sec/Speed 5;
  • Clean the walls of the bowl. Then add the drained eggplants and mayonnaise;
  • Set the device for 1 min / Speed 2.5 COUNTERCLOCKWISE;
  • After the end of the program, add salt and pepper according to your taste and put mix extra 30 sec/ Speed 2.5 COUNTERCLOCKWISE.
