Ingredients
 
 

  • Chicken/ turkey thigh(s)
  • 3 pcs carrots
  • 3 pcs parsnips
  • 1 pc celery root
  • 1 pc onion
  • 200 g noodle pasta
  • 1 pc bunch fresh parsley
  • 2 tbsp dried grounded veggies
  • 2 L water
  • Salt and black pepper

Instructions
 

  • Optional: If you cook using a slow cooker or a multicooker, like I did, place the chicken/ turkey into a bowl with water and boil the meat for at least 5 minutes. This way, you have the opportunity to remove the foam that results from boiling meat before cooking the soup.

  • Meanwhile, peel and clean the veggies. Then, cut them into pieces like you prefer
  • Place the chicken/ turkey and the chopped veggies into the Crockpot
  • Pour the water and place the onion and the fresh parsley into the cooking pot. I use the bunch of parsley, then I remove it at the end of the cooking process. You can simply finely chop the parsley and leave it into the soup, without removing it.
  • Add the dried grounded veggies / veggie paste, salt and black pepper
  • Close the lid and cook the soup using Slow cooking for 3 HOURS at Low temperature
  • Once the cooking stops, remove the bunch of fresh parsley, the onion and the chicken/ turkey from the pot
  • Add the noodles and cook for 3 MIN – MANUAL (or simply cook 15 min in the slow cooker)
  • Remove the meat from the bone and add it to the cooked soup
