Spinach Roll with Cream Cheese
Equipment
- 1 Thermomix / Mixer
- 1 Baking tray
- Bowls
- 1 Flour sifter
- 1 Plastic wrap
- 1 Spatula
Ingredients
For the spinach dough:
- 400 g fresh/ frozen spinach
- 3 pcs eggs
- 250 g flour
- 150 g sour cream
- 1 tsp baking soda
- 1 tsp baking powder
- Salt and black pepper
For the filling:
- 100 g butter at room temperature
- 200 g cream cheese
- 100 g sour cream
- 1 pc green onion
- Β½ pc red bell pepper
- Salt and black pepper
Instructions
- First, preheat the oven at 180β (356β);
- Now, you need to cook the spinach if you are using fresh spinach. For this, it is important to rinse the spinach leaves and place them into a pot with water. Boil them for 10 minutes. If you use frozen spinach, all you have to do is to defrost it;
- Leave the cooked spinach to drain and completely cool into a sieve;
- Now, place the butterfly whisk into the mixing bowl of the Thermomix;
- Separate the egg yolks from the egg whites and place the egg whites into the mixing bowl; Add Β½ tsp salt;
- Whip the egg whites 4 MIN β SPEED 3.5. If you use a mixer, whip the egg whites at high speed for 3-4 minutes; Transfer the egg whites foam into a different bowl;
- Place the sour cream for the dough, the eggs and the spinach into the mixing bowl and mix them 1 MIN β SPEED 5. You can do the same thing using a mixer
- Add the egg whites foam and gently incorporate it with a spatula. Add salt and black pepper to taste;
- Mix the flour with the baking soda and the baking flour and add it into the mixing bowl using a flour sifter;
- Gently incorporate the flour into the composition using a spatula;
- Pour the batter into a backing tray covered with baking paper. Use a spatula to level the batter into the baking tray
- Bake the spinach dough into the preheated oven at 180β (356β) for 15 MINUTES
- Take out the baked spinach dough from the oven and place it on a wet towel (leave the backing tray on the bottom of the dough)
- Roll the spinach dough using the towel and leave it to sit rolled until you make the filling;
- Now, itβs time for the filling. For this, you can cut the vegetables into small pieces with a knife or you can use the Thermomix, like I did
- Place the vegetables cut into pieces into the mixing bowl, add the soft butter, sour cream, cream cheese, salt and black pepper to taste;

- Roll the dough and remove the baking paper;
- Place the spinach roll into plastic wrap and leave it info the fridge for 3 hours before serving it
- Serve the spinach roll with cream cheese as a starter for you festive/ family meals;
