Where does the Cabbage Pie recipe come from?

I honestly don’t know if the Cabbage Pie is original from a certain region of the world, but in Romania, the Cabbage Pie is specifically cooked in the Transylvanian region. The name that we use for this type of cabbage pie is “Palanet”, and it can be baked in several ways, using different fillings.

Today, I am proudly presenting you the Cabbage Pie, which basically represents a pizza dough filled with roasted cabbage. But, as I already mentioned, the dough of this cabbage pie can be also filled with cheese, ham and cheese, roasted mushrooms, roasted cabbage with sausages or minced meat.

In our home, we like to eat cabbage pie or cheese pie, cooked in similar ways. It is possible for those of you who are not used to this kind of sour pies to feel a little unsure about whether to try this cabbage pie recipe. That’s ok, but let me tell you that the roasted cabbage that I use for its filling is absolutely delicious and I will show you how to roast the cabbage in the right way.

How to cook delicious roasted cabbage?

For better understanding of how to can cook roasted cabbage to fill this delicious pie, it is very important to follow my roasted cabbage recipe.

Basically, you need very few ingredients, namely: onion, a little oil, fresh cabbage, a little tomato juice, salt and pepper. Also, if you like to season your cabbage, I recommend using a sprig of thyme. If you can’t find fresh thyme, you can use packaged thyme, which is readily available on grocery store shelves.

To make this roasted cabbage recipe, I recommend using a large saucepan or a wok, with the largest diameter possible, to allow the cabbage to cook evenly.

The first step of this roasted cabbage recipe is to julienne cut the cabbage. You can use a mandolin slicer, or shred the cabbage using the Thermomix. It is also necessary to cut the onion julienne.

Next, add a little oil to the pan. Once the oil is hot, add the julienned onion and cabbage and stir a bit. As the cabbage softens, its volume in the cooking pot decreases. That way, even if you don’t manage to add all the cabbage at the start, you can add more during the cooking process.

After the cabbage and onion are slightly sauteed, add salt and pepper to taste, and then add a little tomato juice. The purpose of the tomato juice is to give a good taste, so a very small amount of tomato juice is needed, you don’t need to add a lot of liquid, because then the cabbage becomes too liquid and we don’t want that.

At the end, you can add the sprig of thyme, which you place on top of the cabbage, then put the lid on and let it cook on low heat for about 30 minutes, stirring occasionally. If you don’t mind the presence of thyme in the food, you can add dried thyme from the store, which you will later incorporate into the roasted cabbage. If you choose to use the sprig of thyme, you can remove it at the end of the cooking process, so the dish will have an intense flavor, but the spice will not remain in the roasted cabbage.

This roasted cabbage recipe can be used as a side dish for different types of meat, fried sausages or cooked on the grill.

We, however, will use this roasted cabbage recipe to get a delicious filling for the cabbage pie.

How to cook cabbage pie?

Once the roasted cabbage filling is cooked, we can move on to the next step, namely baking the pie. For this, we will use a pizza dough. I always use the pizza dough recipe from Cookidoo because it is extremely tasty and easy to prepare. If you do not have access to the Cookidoo platform, I strongly recommend that you use any pizza dough recipe that is based on flour, water, yeast and salt.

We will spread the pizza dough on a surface covered with flour, to avoid the dough sticking to the work surface. To get a delicious cabbage pie, I recommend that you divide the dough into two equal parts, which you spread well, using a rolling pin. You will place the first dough sheet on a baking paper, then you will add the roasted cabbage, and you will place the second dough sheet on top.

Stick the two dough sheets together on the edges, to prevent the composition from leaking into the oven. At the end, coat the top layer of the cabbage pie with an egg yolk mixed with a spoonful of milk and this way you will get a delicious crust for this wonderful cabbage pie.

Another way to fill this pie is to keep the dough in one large piece. Thus, using a work surface covered with flour, spread all the dough so that you get a generous sheet of thin dough, in the center of which you will place the roasted cabbage filling, and then you will pull the dough from the edges towards the center of the pie, covering the layer of roasted cabbage with pizza dough.

Regardless of which option you choose, once the pie is covered, and after coating it with egg yolk mixed with a little milk, prick the dough in places with a fork and then put the pie into the oven.

I always choose to bake cabbage pie in the oven at 200o Celsius, for about 30 minutes, or until I get a nice brownish crust.

After removing the cabbage pie from the oven, let it cool for 10 minutes, and then you can enjoy it for dinner, snack or as an appetizer. Don’t forget, the same recipe can be used to fill the pie with cheese, roasted mushrooms or any other filling you prefer.

Ingredients
 
 

  • 30 g Extra virgin olive oil + extra for greasing
  • 220 g lukewarm water
  • 1 tsp sugar or malt powder optional
  • 20 g Fresh yeast crumbled or 2 tsp dried instant yeast
  • 400 g baker’s flour
  • 1 pc cabbage
  • 1 pc onion
  • 200 g Tomato juice
  • 1 pc Egg yolk
  • 1 tsp Milk
  • Salt
  • Pepper
  • Red paprika

Instructions
 

Pizza dough (I use Cookidoo recipe)

  • Lightly grease a large bowl with oil and set aside. Place water, sugar or malt powder (optional) and yeast into mixing bowl and mix 20 sec/speed 2.
  • Add baker’s flour, oil and salt and knead Dough/2 min. Transfer dough into prepared bowl and work into a ball. Cover bowl with plastic wrap and leave to prove in a warm place until doubled in size (approx. 1 hour). Use as required.

Cabbage Pie

  • Add the cabbage chopped in 2-3 cm pieces in the mixing bowl and grate by using 4 sec – Speed 4. Repeat until you grate the whole cabbage. Move the grate cabbage into a large bowl and set aside. Chop the onion by adding it (cut in half) in the mixing bowl and select 5 sec – Speed 5;
  • Use a large pan or a wok to saute the onion and the cabbage reserved at the previous step. Add salt, pepper, red paprika and tomato juice as you like. Cover the pan with a lid and let it cook for aprox. 1 hour. Mix it from time to time;
  • After the cabbage becomes soft and tasty, let it cool;
  • Meanwhile, cut the dough in two pieces. Roll up each dough on a floured surface to create two similar dough sheets;
  • Cover the first sheet with the cabbage mixture and use the second sheet to overlay. Using your fingers, stick the two layers of dough together. Use a fork to prick the top layer;
  • Mix the egg yolk with a spoon of milk and add it on top of the top layer of dough. Add salt and pepper, based on your preferences;
  • Bake in the preheated oven for 20-30 min at 200℃
