The secret for the best French savory cake

As in most of the recipes on the blog, there is a secret that will help you achieve the best French savory cake.

This secret consists in separating the egg yolks from the egg whites. Then, using the butterfly whisk of the Thermomix or a mixer at high speed, we will whip the egg whites until a stiff foam is obtained.

At the end, the egg whites foam will be mixed with the yolks and the rest of the ingredients until completely incorporated, thus obtaining a savory sponge cake.

Basically, we use the same technique as in the case of sweet sponge cake to cook a savory sponge cake.

Serving and presentation

As already mentioned, I cook this French savory cake recipe especially as a starter for holiday meals. But, this simple dish, which is a vegetable cake, can also be served as a healthy and nourishing snack, which can be easily use even for the lunch box.

Keep in mind that this French savory cake can be enjoyed warm, on the day of cooking, or cold, in the following days.

Obviously, the texture is slightly different if it is served cold, because the cheese in its composition is much creamier when it is served warm. But the taste is delicious even if you serve it cold.

If you do not manage to consume it on the day of preparation, I recommend that you keep it in the refrigerator for 3-4 days, preferably wrapped in plastic film or baking paper, to prevent it from drying out.
