Choosing the right ingredients

This stew is a versatile dish, so you can play with the list of ingredients according to your preferences or needs. I chose to use chicken breast, because it is very easy to use and cook, and in stew recipes I think it fits perfectly. In addition, both chicken meat and mushrooms are ingredients that get a soft texture after cooking. Here are some tips for choosing the right ingredients for this healthy chicken mushroom stew:

  1. If you prefer, you can replace the chicken breast with chicken leg, or you can even use pork, beef or turkey;
  2. As for mushrooms, I usually choose champignons because they have a soft texture and a not very prominent taste. So, for kids friendly recipes, these mushrooms seem ideal to me;
  3. The rest of the vegetables you will use to make a creamy chicken and mushroom stew can be different. I went for the simple version, using only onion and garlic, for taste. If you wish, however, you can add more vegetables, such as red pepper, zucchini or game, to obtain a more complex stew;
  4. I used the common spices, namely salt, black pepper and sweet paprika, but feel free to use your cooking skills to combine several spices, if you wish to do that;
  5. For the final step of this recipe, which represents adding sour cream to achieve a creamy chicken and mushroom stew, I highly recommend you to use a fatty cream, with at least 20% fat.

The secret for a Creamy Chicken Mushroom Stew

cornstarch chicken stew

Although I have tried to obtain a creamy stew over time using various methods, whether we are talking about a culinary dish with sauce cooked normally, in the pot, or using a kitchen device, such as a slow cooker or a multicooker, you need a secret ingredient to thicken the sauce.

So, after adding all the vegetables and spices you want, in addition to the meat and the liquid in which the stew is cooked, regardless of whether we are talking about vegetable soup, cream, tomato juice or plain water, at the end of the cooking process the sauce must be bound with flour or cornstarch.

What this means? Well, it’s very simple.

Practically, in the last 5 minutes of the cooking process, we will mix 1 tablespoon of flour or cornstarch with a few tablespoons of liquid. Then, gradually add this mixture to the stew and mix well. Let this mixture be incorporated into our chicken mushroom stew and cook on low heat for 5 minutes.

If you cooked the chicken and mushroom stew in a slow cooker, then lift the lid, insert this mixture, mix well and extend the cooking for another 10-15 minutes, also using the slow cooking function.

If you cooked the chicken and mushroom stew in the multicooker, using a preset program under pressure, then pour this mixture for the hot stew and mix well. Place the lid of the multicooker over the cooking pot and let this mixture cook in the dish that is very hot inside the device for another 10 minutes before serving it.

Cooking Methods

crock pot cooker

As I already said, this healthy and creamy chicken and mushroom stew can be cooked traditionally, as my grandmother used to do 20 years ago, in a large pot, or you can use various kitchen devices, such as:

  1. Slow Cooker: this way you have the possibility to introduce all the ingredients from the beginning of the cooking process and there is no need to supervise the appliance while it is cooking. Your intervention necessary only in the last few minutes of cooking, to thicken the sauce. The advantage of this cooking method is that no nutrients are lost, the device is cooking all the ingredients slowly, in a hermetically sealed pot, thus obtaining an extremely healthy and tasty meal;
  2. Multicooker: using such a device with preset programs for various types of meals, you practically have the freedom to carry out other household chores while the device is cooking. As in the case of the Slow cooker, there is no need for your intervention during the cooking process. However, using programs under pressure, it is necessary to release the pressure from the pot at the end of the cooking process. This method is the fastest, because the food is cooked at high temperatures.
  3. Thermomix: the owners of this wonderful kitchen device also have the opportunity to cook various types of stews, using the preset programs of the device, or following their own recipe, which they adapt to the characteristics of this wonderful cooking gadget.

So, feel free to cook this easy and delicious Chicken and mushroom stew however fits you best.
