I made this creamy chicken and mushroom stew using the Crockpot Express Multicooker, but feel free to cook the old styled way using a pot, or with the help of a slow cooker. The final result will be absolutely delicious, no matter how you choose to cook it.

Equipment
- 1 Multicooker / Pot / Slow Cooker / Thermomix
- 1 Food chopper / Knife
- 1 Bowl
- 1 Fork
Ingredients
- 2 pcs Boneless chicken breast
- 7-8 pcs Champignon mushrooms
- 4-5 pcs Garlic cloves
- 1 pc Onion
- 1 tbsp Flour / Cornstarch
- 300 gr Sour cream (at least 20% fat)
- Vegetable oil
- Salt
- Black pepper
- Sweet paprika
Instructions
- First, you need to cut the chicken breast / boneless chicken leg into pieces and season it with vegetable oil, salt and black pepper;
- Now, heat the multicooker by selecting the BROWN / SAUTEE program for 15 minutes; If you cook in a pot, simply heat the pot on the stove;
- Once the pot is heated, add some vegetable oil (1-2 tbsp) and then add the seasoned chicken pieces; Add salt, black pepper and sweet paprika;
- Stir-fry the chicken for 10 minutes or until it becomes golden brown;
- Meanwhile, peel and rinse the onions and the garlic cloves;
- Using a food chopper or a knife, chop the onions and the garlic cloves;
- Once the chicken is cooked on the surface, remove it from the pot and place it into a bowl;
- Now, for the remaining 5 minutes, stir-fry the onions and the garlic cloves;
- Meanwhile, rinse the mushrooms and remove their skin. IMPORTANT: It is not necessary to peel the mushrooms and remove their leg, but I like to use them without skin or leg.
- Now, using a knife, cut the champignon mushrooms into pieces;
- Once the program is over, add the chicken pieces, then place the mushrooms into the pot;
- Mix well all the ingredients in the pot;
- Add the sour cream and cook the stew using POULTRY program for 35 minutes;
IMPORTANT: You might think that the sour cream doesnβt assure the right amount of liquid for the stew, but during the cooking process, the mushrooms will eliminate a lot of water, so this should be enough.
- When the program has finished, slowly open the pressure valve and release the pressure from the pot;
- Now, using a bowl, mix 1 tbsp flour or cornstarch with 3-4 tbsp water to get a homogeneous mixture;
- Slowly pour this mixture in the pot and incorporate it into the slow, using a spatula;
- Place the lid on top of the multicooker and leave it to rest at least 10 minutes before serving it; The mixture will properly cook during this time in the hot stew.
- Serve the stew warm with a salad or a side dish, as you prefer.

So, if we return to what I mentioned from the beginning of this article, namely the fact that Chicken mushroom stew is a versatile dish, using different ingredients, you can obtain different variations of this main dish.
- So, if you are not a fan of fatty cream dishes, you can replace the cream with tomato juice. Thus, you will get a stew similar to this amazing Turkey Stew, except that you replace potatoes with mushrooms for your dish;
- If, however, you want to use another type of meat, you can easily get a Turkey Stew, Beef Stew or Pork Stew, without effort;
- If you are a spicy food lover, then use your favorite spices and you can get Spicy Stew, without having to change the list of ingredients.

The secret for a Creamy Chicken Mushroom Stew
Although I have tried to obtain a creamy stew over time using various methods, whether we are talking about a culinary dish with sauce cooked normally, in the pot, or using a kitchen device, such as a slow cooker or a multicooker, you need a secret ingredient to thicken the sauce.
So, after adding all the vegetables and spices you want, in addition to the meat and the liquid in which the stew is cooked, regardless of whether we are talking about vegetable soup, cream, tomato juice or plain water, at the end of the cooking process the sauce must be bound with flour or cornstarch.
What this means? Well, it’s very simple.
Practically, in the last 5 minutes of the cooking process, we will mix 1 tablespoon of flour or cornstarch with a few tablespoons of liquid. Then, gradually add this mixture to the stew and mix well. Let this mixture be incorporated into our chicken mushroom stew and cook on low heat for 5 minutes.
If you cooked the chicken and mushroom stew in a slow cooker, then lift the lid, insert this mixture, mix well and extend the cooking for another 10-15 minutes, also using the slow cooking function.
If you cooked the chicken and mushroom stew in the multicooker, using a preset program under pressure, then pour this mixture for the hot stew and mix well. Place the lid of the multicooker over the cooking pot and let this mixture cook in the dish that is very hot inside the device for another 10 minutes before serving it.

Your intervention necessary only in the last few minutes of cooking, to thicken the sauce. - Multicooker: using such a device with preset programs for various types of meals, you practically have the freedom to carry out other household chores while the device is cooking. As in the case of the Slow cooker, there is no need for your intervention during the cooking process. However, using programs under pressure, it is necessary to release the pressure from the pot at the end of the cooking process. This method is the fastest, because the food is cooked at high temperatures.
