Romanian Pressure Cooker Green Bean Soup – a delicious and healthy vegetable soup made in no time
Equipment
- 1 Crockpot Express Multicooker / Large soup pot
- 1 Vegetable Chopper / Knife
- 1 Spatula
- 1 Bowl
Ingredients
- 400 g green bean pods;
- 1 pc onion
- 2 pcs carrots;
- 1 pc parsnip root;
- 1 pc celery root;
- 250 ml tomato juice;
- 1.5 l water;
- 1 tbsp vegetable oil;
- 1 pc egg yolk;
- 2 tbsp sour cream;
- Salt;
- Black pepper;
- Optional: 2 springs of thyme; other vegetables that you enjoy.
Instructions
- If you use fresh green bean pods, first you have to top the bean and cut the green bean pods into smaller pieces;
- Then, wash the pieces of green bean pods with cold water and use a sieve to drain the green bean;
If you use frozen green bean, you can skip the first 2 steps.
- Using a knife, or a vegetable chopper (I used the Thermomix), grate the vegetables that you choose to use (onions, carrots, parsnip, celery);
- Start the BROWN / SAUTEE Program of the Multicooker and select 10 minutes;
- Once the pot is heated, add the vegetable oil and the grated vegetables; Add salt and black pepper and stir occasionally;
- After the program is over, add the green bean pods;
- Then, add the tomato juice and the water;
- Optional: If you choose to add thyme for extra flavor, simply place the sprigs of thyme on top of the soup, before closing the lid;
- Close the lid and select the SOUP Program for 30 minutes;
- Once the program has ended, carefully release the steam from the pot, open the lid and pour a mixture made from 1 egg yolk and 2 tbsp sour cream, well beaten together, into the hot soup;
- Close the lid again and let the flavors combine well for several minutes;
- Before serving the soup, remove the thyme sprigs;
- Serve the Romanian green bean soup warm, with a julienned red onions salad;
