  • First, peel and rinse the vegetables. Then, cut them in small pieces, of however you choose to use them for the soup

  • Place the vegetables into the cooking pot, add salt and black pepper;
  • Add the tomato juice;
  • Add enough water to cover the vegetables in the pot and achieve a soup consistency;
  • Cook the soup for 3h 30 min using the Slow cooking program, on High temperature. If you use the preset Soup program of a multicooker, 15-20 minutes should be enough. For traditional cooking on the stove, 30 minutes should be enough
  • In the end of the cooking process, use a bowl to mix 2 egg yolks with the sour cream
  • Add 2-3 ladles of hot soup over the mixture in the bowl and mix well
  • Finally, pour the mixture in the cooking pot, over the hot soup and close the lid
  • Let the soup rest for a few minutes, then serve it hot

Calling on my reliable help in the kitchen – Crockpot Express Multicooker – I cooked this healthy soup recipe using the Slow cooking program, at the High temperature.

Thus, while the soup was cooking in this wonderful multicooker, I was able to take care of other household activities, but I could just as easily leave home and solve various chores.

However, it is not mandatory to cook easy vegetables soup recipe like me. You can confidently use the SOUP preset program of a multicooker, if you think it is a more suitable method for you.

Also, if you don’t have such a cooking appliance, you can use a large pot and cook in the traditional way, on the stove.

Being a vegetarian soup, the required cooking time is short, but if you choose to use meat, then it is possible to extend the cooking time so that the meat is soft and tender.

Being an extremely simple and versatile warm dish, there are not many mistakes you can make to ruin the final result.

The only mistake I would mention is the combination of inappropriate ingredients. For example, in my opinion, if you choose to use this soup base, which I also prepared, which at the end gets an extra taste and creaminess thanks to the combination of egg yolk and sour cream, then I don’t think it would be suitable to use vegetables with an extremely strong aroma, for example beetroot.

So, pay attention to the ingredients that you choose to combine.

The secret for creamy grandma’s homemade vegetable soup

Although I mentioned this aspect several times in the article, the secret to obtaining a simple, but creamy and tasty soup, consists in adding, in the last minutes of the cooking process, a mixture of egg yolk and sour cream.

I recommend that this mixture would be made in a large bowl, which will allow you to add a few ladle spoons of hot soup. This is important to avoid the formation of egg lumps in direct contact with the hot soup in the pot.

Thus, pour 2-3 ladles of hot soup one by one, stirring gently, into the bowl in which you mixed the egg yolk and cream. At the end, you can pour the whole mixture into the hot soup pot and let it boil (in the case of traditional cooking) or let it rest in the boiling soup (in the case of using a slow cooker or multicooker) for a few minutes.

Like most cooked dishes, this soup can be cooked in advance and frozen, so you can enjoy it when you need it.

If you choose to proceed this way, my recommendation would be not to add the mixture of egg yolk and sour cream to the dish you are going to freeze. You can do this last step when you decide to defrost the soup and serve it. I think this allows it to be preserved for a longer time.

If you cook a larger amount of soup and want to enjoy it over the course of several days, I recommend that you keep it in the refrigerator for a maximum of 5 days. It is important that when you want to enjoy a portion of soup, heat only the quantity you are going to serve in a small pot. If you reheat the entire amount of soup several times in a row, it will change.
