With a little delay, I am delighted to present to you today another homemade recipe suitable to be prepared together with the little ones, which is the homemade tender biscuits recipe (or you can call them jam sandwich biscuits).

Together with my daughter Sofia, I prepared these wonderful Christmas jam biscuits for the winter holidays, but you can bake this kids friendly dessert at any time of the year, without a special occasion.

So, as you probably already deduced, I am talking about an original recipe for the best jam biscuits, which can be filled with jam, or they can be served plain, sprinkled with a little powdered sugar.

How to make Tender Biscuits?

Maybe for some of you, this recipe for homemade tender biscuits will seem strange at first glance, but I suggest you to try it and draw a conclusion only after tasting these honey biscuits filled with jam.

The peculiarity of this homemade dessert recipe is that, in addition to butter, these biscuits with jam filling also have lard in their composition, this being the different ingredient, which gives them an extremely fine texture.

I don’t know how it used to be in other countries when our grandparents were young but in Romania, lard was a necessary ingredient for making soft biscuits or cookies. At that time, access to butter was limited, but even nowadays, housewives successfully combine lard with butter to obtain special dough. Also, lard can even be used for a tart dough.

If you don’t want to use lard, you can simply increase the amount of butter, so that you can completely replace the lard.

I don’t use lard very often, but for these tender biscuits filled with jam, I thought it was important to add this special ingredient to make them absolutely fabulous.

Also, sometimes I use chicken or pork lard for sauteing or deep-frying different dishes, and that’s because lard has a smoke point of 188°C (370°F). So, for those of you who can consume this food and do not have dietary restrictions that prevent them from consuming products of animal origin, I recommend you to deep-fry your favorite dishes into lard.

I like to use lard when I prepare different types of stew, such as this 5 ingredients Turkey Stew recipe or for cabbage based dishes, such as Cabbage Pie, because this animal fat helps cabbage soften in a unique way and gives a special favor.

Are these tender biscuits kids friendly?

From my point of view, this tender biscuits recipe is kid friendly. And I’ll explain why right now…

First of all, these jam biscuits are SUGAR FREE, using only honey in their composition. Also, the plum jam used to fill or glue these tender biscuits together is a plum jam without added sugar. Even if it may seem strange, don’t forget that fruit jam made from ripe and sweet fruits does not need sugar. The sweetness of the ripe fruits used is enough to obtain an absolutely delicious jam.

In addition, if there are people who do not like fruit jam, take into account that it can be replaced with any other type of cream or even with chocolate and hazelnut cream.

But if you want to leave the biscuits plain, without filling them or without sticking them together, you can do this without any problems. It is not mandatory to make biscuits filled with jam, you can enjoy them plain, with or without a little powdered sugar sprinkled on top.

I chose to dust these tender biscuits with a little powdered sugar at the end just because I prepared them before Christmas, so the whole operation took festive cooking touch.

But powdered sugar has a decorative role, so it is not necessary to use it. So, cooking together with the little ones, you can get a kid friendly dessert without using sugar.

In addition, you don’t want to miss the opportunity to fill the kids’ hearts with happiness because they can cut them out using cookie cutters, or even stick them together using jam or another type of cream.

We also used cookie cutter to make the honey gingerbread cookies, which was a great hit among kids that entered our house during the winter holidays.

How can you store the homemade tender biscuits?

An extremely important advantage of these tender biscuits is represented by the fact that they can be consumed for a long period of time, stored in a metal box. Just like gingerbread cookies or brown sugar walnut cookies, these lard cookies can be enjoyed for a long period of time, up to a month. In addition, it does not require special storage conditions. Therefore, it is enough to place them in a metal box with closing lid and store them on the shelf in the pantry, and they will last for several weeks without problems.

In addition, I noticed that the little ones are mainly attracted to foods that they can easily hold in their hands, that they can enjoy easily, without the help of cutlery or without the intervention of an adult.

So, even if you don’t manage to finish all the jam biscuits in the first few days after their preparation, don’t worry, they can be enjoyed for several weeks, when you crave for something sweet and tender.

  • 1 Thermomix -OR- Bowl and Spatula -OR- Kneading Machine
  • 1 Plastic foil
  • 1 Rolling Pin
  • 1 Cookies Cutters
  • 1 Baking tray
  • 1 Metal Box for storage

Ingredients
 
 

  • 125 g Butter
  • 125 g Pork lard
  • 2 pcs Eggs
  • 100 g Honey
  • 1 pinch Salt
  • 1 tsp Vanilla extract
  • 500 g Flour

Optional

  • Plums jam SUGAR FREE to glue the biscuits together
  • Powder sugar to sprinkle on top of the biscuits

Instructions
 

  • It is extremely important to use soft butter and pork lard at room temperature; Place the butter, the lard and the honey into the mixing bowl and mix them together, to get a nice cream, using 1 MIN – SPEED 3; Remember: If you don’t use a Thermomix or a mixer, simply use a bowl and a spatula;
  • Then, add the eggs;
  • Also, add the vanilla extract and the salt and mix all the ingredients well for 2 MIN – SPEED 3;
  • Now, using a sieve, add the flour and KNEAD – 5 MIN; If you don’t use a Thermomix or a kneading machine, use your hand and you will obtain an amazing tender biscuits dough;
  • Shape the dough into a ball and place it into plastic foil;
  • Place the dough ball wrapped in plastic film into the fridge for 1-2 hours;
  • When you want to bake the biscuits, take the dough out of the fridge and place it on a silicon mat or on a floured surface. Stretch it using a rolling pin;
  • Start cutting the biscuits using the cookie cutter that you enjoy the most. If you don’t have cookie cutters, you can simply shape the dough like a roll and cut slices of dough using a knife;
  • Place the biscuits in a baking tray covered with baking paper and bake them for 9-10 minutes in the preheated oven at 200℃ (392℉);
  • Leave the biscuits to cool and then coat them with plums jam;
  • Using plums jam or any other type of fruits jam, glue every 2 biscuits together;

  • Sprinkle the biscuits with some powdered sugar on top.
