Ingredients
FOR THE BATTER
- 250 g flour
- 2 tsp baking powder
- 2 tsp cocoa/ carob powder
- 2 pcs eggs
- 100 ml sunflower or coconut oil
- 100 g brown sugar/ honey
- 150 ml milk
- 1 pinch salt
FOR THE CHEESE FILLING
- 400 g ricotta cheese
- 100 g brown sugar/ honey
- 2 pcs eggs
- Vanilla extract
- 50 g raisins
Instructions
- First, it is important to soak the raisins in some water;
- Then, using the eggs necessary for the batter, separate the egg yolks from the egg whites;
- Place the butterfly whisk into the mixing bowl of the Thermomix and add the egg whites; If you donβt own a Thermomix, you can use a hand mixer;
- Add Β½ of the sugar necessary for the batter over the egg whites; Also, add 1 pinch of salt;
- Whip the egg whites to achieve a foam, by using 4 MIN β SPEED 3.5 (using the butterfly whisk);
- Transfer the egg whites foam into a different bowl;
- Now, letβs make the egg yolks cream. For this, you have to remove the butterfly whisk from the mixing bowl and add the 2 egg yolks;
- Start mixing the egg yolk for 5 MIN β SPEED 2 without the measuring cup. Meanwhile, slowly pour the vegetable oil through the lid into the mixing bowl, while mixing;
- Also, add the remaining Β½ sugar for the batter through the lid;
- Also, pour the milk through the lid;
- Into a different bowl, mix the flour with the cocoa/ carob powder and the baking powder, using a spatula;
