I will continue the series of extremely easy homemade recipes that are both healthy and tasty, with an absolutely wonderful dish: yellow beans stew. Basically, it is a dish that contains yellow string beans to which we add various vegetables, for extra taste and flavor. All these veggies will be complimented by chicken or turkey meat, and later cooked in a homemade tomato juice.

For a vegetarian dish, you can exclude the meat, thus obtaining a delicious vegetarian yellow beans stew.

As in most of the recipes presented on the blog, the secret for the best yellow beans stew consists in choosing the right ingredients.

Being an extremely simple recipe, which is based on several vegetables, I recommend you to choose organically grown vegetables. Even if you choose to cook this yellow beans recipe in the cold season, when you don’t have fresh, organically grown vegetables at hand, I recommend you preserve them ahead of time, so you can enjoy them for long-term.

As in the case of many stew recipes, in the case of this yellow beans recipe I chose to use a reliable helper in the kitchen: Crockpot Express Multicooker.

What fascinates me about this cooking device is the freedom it gives me to do other household chores, while it cooks the meals without my help.

But, if you don’t have such a device, you can cook yellow beans stew using a simple pot or a slow cooker.

If you choose to cook in a pot, on the stove, I recommend you to choose a wider pot, because this way the cooking surface is more generous and the sauce from the yellow beans stew will thicken faster during the cooking process cooking.

In this case, you need a maximum of 45 minutes to boil fresh yellow beans. If you use precooked yellow beans, you don’t need more than 15 minutes to finish this yellow beans recipe.

If you choose to cook in a slow cooker, I highly recommend you to cook the yellow beans stew for 3,5 hours on HIGH temperature, or 7 hours on LOW temperature. This can depend on the type of yellow beans that you use, as well.

  • 1 Vegetablegrater

Ingredients
  

  • 1 kg yellow string beans fresh or canned
  • 1 pc red bell pepper
  • 1 pc yellow onion
  • 1 pc red onion
  • 2 pcs bay leaves
  • 2 pcs small carrots
  • 500-700 g tomato juice preferably homemade
  • Salt
  • Black Pepper
  • Sweet Paprika
  • Lard / Vegetable oil to brown the vegetables
  • 500 g Optional: chicken / turkey

Instructions
 

  • First, it is important to peel and rinse the vegetables; Also, if you use canned yellow beans, drain them, using a sieve. If you use fresh yellow beans, then rinse and cut the yellow string beans into smaller pieces;

  • Grate the vegetable using a vegetable grater. I used the Thermomix 5 SEC – SPEED 5;
  • If you choose to add meat, cut the chicken/ turkey into small pieces;
  • Now, select the BROWN/ SAUTEE program of the Crockpot Express Multicooker for 5 minutes. Once heated, add the lard/ vegetable oil, the grated vegetables and the meat and season them with salt. Black pepper and sweet paprika. Then, cook them by stirring occasionally without the lid.
  • Once the program has ended, add the tomato juice and the bay leaves. Add more salt, if necessary;
  • Close the lid and cook the yellow beans stew for 20 minutes using the MEAT/ STEW program of the multicooker.
    IMPORTANT: Keep in mind that you can also cook the yellow beans stew in a slow cooker or a simple pot.
  • Optional: By the end of the cooking process, if you feel like the stew is too thin, add a mixture made of 1 tbsp of flour and water into the hot stew. Mix continuously until the mixture is fully incorporated. This will thicken your stew.
  • Serve the yellow beans stew hot at lunch or dinner, it is up to you.
