In my opinion, vegetables stew can be prepared according to your preferences and the ingredients you have at hand, in different combinations. How to cook vegetables stew using a multicooker?

If you own a multicooker, whether it’s a CrockPot or another brand, you can consider yourself lucky 😊 In my opinion, any type of kitchen appliance truly eases your cooking. In this case, I used the CrockPot Express Multicooker to cook this incredible 20 minute chicken and vegetable stew. I managed to do that by cooking the stew using the POULTRY Program for only 15 minutes.

Yes, that is correct. In 15 minutes, without any movement, you will get the delicious chicken and vegetable stew. And you have the freedom to use those 15 minutes for yourself, to enjoy a quiet coffee, to do other household chores or to spend quality time with your loved ones.

This is the program I used on my Multicooker, but I’m sure whatever other brand your multicooker is, it definitely has a special program for chicken, stew, or something similar.

You can use the same program if you choose a different type of meat, but you need to adjust the cooking time. Pork, beef and turkey need a bit more cooking time, so I would suggest extending the cooking time by about 5-10 minutes if you are opting for a meat other than chicken.

If you choose the vegetarian option for the stew, then even 10 minutes are enough, if you don’t want to overcook the ingredients.

What vegetables to add in the stew?

As I mentioned at the beginning of the article, I think you can add the vegetables you like, or the vegetables you have at your disposal, in the pantry or in the fridge. As always, I recommend using fresh vegetables, which you can find in the summer season in gardens or markets, but it is also okay if you choose to use frozen or canned vegetables. If you choose frozen or canned vegetables, try to be careful and adapt the cooking time, taking into account the fact that most of these products are pre-cooked, so they don’t need as much cooking time as the fresh ones.

For extra taste and flavor, I recommend adding onions to any stew recipe. In addition, garlic is another tasty and healthy ingredient. It is well known that garlic and onions contribute to strengthening the immune system if consumed regularly.

I also like to add carrots and red peppers, as I find that these vegetables provide a sweet taste that is especially pleasing to children, but also to adults. From my point of view, for the vegetarian version you can add potatoes instead of meat. But it is not mandatory, as I repeat – everyone is free to add whatever ingredients they want to the stew composition.

Other vegetables that I consider suitable to be added to vegetable stew, regardless of whether meat is used or not, would be: zucchini, eggplant, cauliflower or broccoli.

  • 1 pc Onion
  • 1 pc Garlic
  • 1 pc Carrots
  • 1 pc Red Pepper Bell
  • 500 g Chicken breast
  • 20 ml Vegetable oil
  • Salt
  • Black pepper
  • Tomato Juice
  • Water
  • Bay leaves

Instructions
 

  • Preheat the CrockPot Express Multicooker by selecting the BROWN/SAUTEE program for 10 minutes;
  • Once the pot is heated, add some oil and the chicken breast; Add salt and pepper and stir;
  • After 5 minutes, add the vegetables, cut into slices or pieces, as you prefer. Also, add the grated garlic.
  • After the program stops, add the tomato juice and some water (so that you can cover the ingredients with liquid in the pot). Add two bay leaves;
  • Cook the chicken and vegetable stew using the POULTRY Program for 15 minutes.
