What is roasted red pepper soup?

Maybe some of you have heard, or even enjoyed a bowl of roasted red pepper soup. The most popular versions of this dish are roasted red pepper and tomato soup or the famous red pepper Gouda soup. But today I chose to present you a kids friendly recipe. What does this mean? Basically, we will use a simple recipe of vegetable cream soup, to which we will add an extra taste using roasted red peppers.

I chose to use this recipe because this way I have the opportunity to introduce many vegetables full of important nutrients in the bowl of bell pepper cream soup that I will offer to my daughter.

You can use this “trick” even when you have picky eaters, who categorically refuse certain vegetables. By introducing these vegetables into the soup, which you will then blend, you will be able to “trick” them. It is not necessarily the most wonderful way to give the child a healthy meal, but if you have tried all the other options without success, I suggest you try to do this as well.

So, as I said, in my opinion, this is the best roasted red pepper soup recipe, especially if you have kids.

Is roasted red pepper soup healthy?

As I stated above, the recipe I chose to present to you today for roasted red pepper soup is full of extremely important nutrients both for the normal functioning of the body and for the development of children.

But that does not mean that other types of red pepper soup recipes are not as healthy. Here I mention the famous red pepper gouda soup or the well-known roasted red pepper and tomato soup, which are delicious and healthy, too. However, I don’t know if the combination of tastes and aromas is necessarily to the children’s taste in the case of these recipes.

Equipment

  • 1 Thermomix OR Pot and Hand Blender
  • 1 Knife

Ingredients
 
 

  • 800 gr Soup vegetables I used carrots, parsnip, zucchini and carrots – cut into pieces
  • 2 pcs Onions cut into halves
  • 2 pcs Roasted red pepper
  • 20-30 g Olive oil
  • 850 g Water
  • Salt
  • Black pepper

Instructions
 

  • First, add the soup vegetables, onions and pour the water in the mixing bowl of the Thermomix; If you don’t use the Thermomix, simply chop the vegetables in small pieces and place them into a pot;

  • Add salt and black pepper, then place the simmering basket on top of the bowl and cook 25 min/100℃ (212℉) /SPEED 1; If you cook in the pot, cook the vegetables for 25 minutes, and stir occasionally;
  • Add the olive oil and the roasted red peppers and BLEND the ingredients 1 MIN by increasing the SPEED from 5 to 10; If you cook in the pot, use a hand blender to create the creamy soup;

  • If the soup is too thick, add some water and cook extra 5 MIN – 100℃ (212℉) – SPEED 1;
  • Serve warm, with croutons.
