The secret to the best spinach puree consists in using the right amount of liquid and solid ingredients. In the case of this spinach sauce, we are talking about milk and spinach. It is important to use milk for this puree, and not water, because it will give it a fabulous taste and a creamy texture.

For taste, the surprise element is garlic. This, used in a small amount, will give this spinach sauce a unique taste.

Equipment
- 1 Thermomix OR Blender OR Mixer OR wooder chopper OR mortar and pestle set
- 1 Pot

Ingredients
- 1 kg fresh spinach or 500 gr frozen spinach/ boiled spinach
- 250 g milk
- 3-4 pc garlic cloves
- 50 g butter cubes
- Salt
- Pepper
Instructions
IMPORTANT!!! If you use frozen or already boiledspinach, please skip the steps 1-3!
- First, cut down the spinach tail leaves, because it is important to use the leaves with more flavor;
- Rinse the spinach leaves with water and put them in a big pot to boil with a pinch of salt;
- Boil the spinach for 15 minutes and then use a sieve to drain the water. Let the spinach cool down in the sieve;
- Place the garlic cloves in the mixing bowl of the Thermomix and GRATE them using 5 SEC β SPEED 5. Scrape down the walls of the bowl;
- Add 20 gr of butter and select 2 MIN β 60β (140β) β SPEED 0.5;
- Add the milk, the rest of the butter, salt and pepper then select 5 SEC β SPEED 6, to create a mixture;
- Scrape down the bowl and then cook using 30 MIN β 100β (212β) β SPEED 2;
- After the cooking time is over, select 10 SEC β SPEED 7, to create a fine consistency.TIP: If your spinach puree is too liquid, create a mixture made of 1 tbsp cornstarch and some water and pour it over the puree. Then, mix the puree as mentioned at step 8.
- Add salt and pepper as you like.
You can use the spinach as a side dish or you can mix it with pasta (toddlers usually love them!)
