I used an iron cast pot from Crockpot, which I am extremely happy with, because it is a wide cooking pot, which gives me the opportunity to prepare a large amount. This is perfect especially for family gatherings or holiday meals.

Ingredients
 
 

FOR THE CABBAGE LAYER

  • 2 pcs Cabbage heads (medium) fresh or sauerkraut
  • 2-3 pcs Onions
  • 100 ml Vegetable oil/ melted lard
  • Salt
  • Black pepper
  • Sweet paprika
  • Thyme

FOR THE RICE LAYER

  • 300 g Rice
  • 1 L Water
  • 1 tsp Salt

FOR THE GROUND MEAT LAYER

  • 1 kg Ground meat beef, pork or a combination
  • 1 tbsp Vegetable oil
  • 2-3 pcs Onions
  • 1 Carrot
  • Salt
  • Black pepper
  • Sweet paprika

FOR THE TOP LAYER

  • 2 pcs Eggs
  • 3-4 tbsp heavy sour cream

EXTRA:

  • 250-400 ml tomato juice
  • Optional: sour cream for extra flavor

Instructions
 

  • I like to start with the cabbage layer, because my cabbage was only half pickled and this means that I need to cook it a few minutes longer. Also, if you use fresh cabbage, you need to know that you need to cook it a little longer than the sauerkraut
  • So, use a sharp knife and finely slice the cabbage
  • Then, add the vegetable oil / the lard into a preheated pan on the stove.
  • Add the finely chopped cabbage and season it with salt, black pepper and sweet paprika.

  • Mix well and add thyme. Cover the pan with a lid. Stir occasionally
  • My cabbage needed 40 minutes to be perfectly cooked. Take into account that the cabbage will be cooked also in the oven
  • During this time, I started to cook the ground beef. For this, I chopped the onions and the carrot, using the Thermomix for 5 SEC – SPEED 7. You can use a knife or a vegetable grater for this
  • Using a preheated pan, add the vegetable oil and the ground meat. I used a mix between ground meat and ground pork, and I minced the meat at home, using a meat grinder
  • Also, add salt, black pepper and sweet paprika according to your taste

  • Now, add the grated vegetables on the pan with ground meat and mix them well
  • Stir-fry for 15-20 minutes, until the meat is browned
  • Now, it’s time to boil the rice.
  • IMPORTANT: It is important to rinse the rice for 1-2 times before cooking it.
  • I used my Thermomix for this step, namely the Steamed Rice recipe that allows you to cook the rice in the simmering basket.
    You can simply boil the rice into a pot with water and salt, according to the cooking time suggested on the packaging.
  • Now, it is time to assemble the dish that will be cooked into the oven.
  • Preheat the oven at 180℃ (356℉)
  • Grease the cast iron pot with a little oil. Add Β½ of the cooked cabbage to form the base layer
  • Then, add the boiled rice
  • Now, add the ground meat layer
  • In the end, place the top layer of cabbage
  • Now, it is time to add the tomato juice, because this will give the cabbage and ground beef skillet a smooth texture and a great taste
  • Place the lid over the cast iron pot and cook the stuffed cabbage skillet into the preheated oven for 1 hour at 180℃ (356℉)

  • Using a bowl, crack the eggs and whip them until you achieve a fluffy egg wash. Mix them with the sour cream and pour this mixture over the stuffed cabbage skillet in the last 20 minutes of cooking
  • After that, cook the cabbage and ground beef skillet without the lid
  • Once cooked, leave the cabbage and ground beef skillet to cool for at least 30 minutes before serving it.
