  • Chicken/ turkey
  • 3 pcs carrots
  • 1 pc celery root
  • 3 pcs parsnips
  • Green parsley
  • 3 pcs eggs
  • 100-150 gr semolina
  • Salt
  • Black pepper
  • Water

Instructions
 

  • First, peel the veggies. Cut them in the shape that you prefer or grate them using a vegetable grater
  • Then, fill the pot with cold water and place it on the stove to boil. Add 1 tsp salt
  • If you decide to use chicken, now it is the perfect moment to add the chicken into the boiling water
  • Add the chopped veggies, to achieve an amazing homemade chicken broth
  • Add green parsley (you can chop it if you like), salt and black pepper
  • Place the lid on pot of the pot and leave the chicken broth to cook for 1 hour
  • After this time, use a ladle strainer to take out the chicken and the veggies
    TIP: This step is optional. If you like to leave the chicken and the veggies in the soup, it is ok. I like to take them out to make space for the dumplings. Usually, I use the boiled chicken and veggies for a chicken salad.
  • Using a kitchen stale, weight the eggs just like they are, with the shells;

  • Now, weight the semolina. You goal is to use 20-30 gr fewer semolina that the eggs (In my case, the eggs had 167 gr and the semolina was 146 gr)
  • Using a bowl, crack the eggs and beat them well using a whisk or a fork until you get a nice egg wash. Add Β½ tsp salt
  • Gently add the semolina while continuously mixing;
  • Using a small spoon, form semolina dumplings and place them into the boiling soup
    TIP: If you soak the spoon into hot soup before using it to form the dumplings, the semolina and egg composition will come off easier!
  • Place the lid over the pot and leave the dumplings to cook for 15 minutes
  • After the dumplings are cooked, you can place back the veggies into the soup
  • Serve the soup warm
