I have shown you this culinary trick in the case of other soups recipes, such as Turkey vegetable soup or Meatballs soup. Basically, this habit is part of the kitchen hacks for beginners who want to obtain a creamy and tasty soup.
So, all you have to do is use 2 eggs, from which you have separated the yolks. Place the yolks into a bowl, mix them well with a fork or a whisk. Then add 2-3 generous tablespoons of sour cream. I recommend you choose a sour cream with at least 25% fat, because this way you will obtain a crockpot creamy chicken soup.
Different ways to thicken sour chicken soup
Whether we are talking about sour chicken soup, or any other soup recipe, there are some culinary tricks that you can use to achieve a thicker consistency.
These are:

Ingredients
- 3 boneless chicken thighs
- 2 L water
- 2 carrots
- 1 celery root
- 1 parsnip
- 3 potatoes
- 4-5 garlic cloves
- 50 g rice
- Borscht juice/ lemon juice
- 3 tbsp fat sour cream
- 2 egg yolks
- Salt
- Black pepper
Instructions
- First, it is important to soak the rice into water. This way, you can rinse the rice and also it helps the rice to cook faster
- Place the chicken into the Crockpot Express Multicooker
- Then, pour the water over the chicken and add salt and black pepper
- Close the lid and seal the pressure valve
- Cook the chicken using the POULTRY program on HIGH pressure for 15 MIN
- Meanwhile, prepare the vegetables for the soup
- Peel the vegetables and cut them into the shape that you prefer. I like to crush the garlic using a garlic press
- Once the POULTRY program has ended, release the pressure from the cooking pot, using a kitchen glove and take out the chicken from the pot
- Place the chicken on a plate and cut it into pieces. Remove any tough parts
- Transfer the chicken cut into pieces into the pot with the chicken broth achieved earlier, add the vegetables and the rice
- Add borscht juice / lemon juice. IMPORTANT: if you use borscht juice, you will need approx. 400 ml. If you use lemon juice, you need to squeeze one lemon!
- Cook the sour chicken soup using the SOUP program, HIGH pressure, for 20 MIN
- After that, carefully release the pressure from the pot using a kitchen glove
- Into a different bowl, place 2 egg yolks with the sour cream
- Mix well using a fork or a whisk
- Take some hot soup from the pot, using a ladle and pour it over the egg yolks and sour cream mixture
- Pour this composition over the hot soup in the pot and mix gently for a few seconds
- Close the lid and leave the flavors to combine for 30 minutes before serving
- Serve the soup warm with extra sour cream

As the name of the recipe suggests, we will use poultry for this chicken soup with sour cream. But which part of the chicken is best for this sour chicken soup?
I recommend using chicken thighs. Whether you choose to use the lower leg or the upper leg, I highly recommend using this part of the chicken, because it is a soft meat.
You can also use chicken breast, obviously, but this part of the chicken is a little bland than chicken thighs.
You can choose chicken thighs with bones, which you cook like this, and at the end simply clean the meat from the bone and reintroduce it into the soup.
Or, you can choose, like me, boneless chicken thighs, which you carefully cut, eliminating the tougher parts.
